Smashed Sweet Potatoes

These Smashed Sweet Potatoes are such an easy and delicious side dish to pair with your go-to protein or main! Made with less than 5 ingredients.

Yield: Serves 3-4 1x

Ingredients

Scale
  • 3 large sweet potatoes, scrubbed and cut into 1-inch rounds
  • 3 tablespoons olive oil or avocado oil
  • 1/2 teaspoon garlic powder
  • Sea salt and black pepper to taste 
  • 1/3 cup freshly grated parmesan cheese

Instructions

  1. Preheat oven to 450 degrees F
  2. Grease a large rimmed baking sheet with a thin layer of olive oil and set aside
  3. Add sweet potatoes to a large pot, then cover with cold water by an inch or so and bring to a boil
  4. Once the water boils, cook on high heat for 5 minutes, or until tender (you should be able to stick a fork in it!)
  5. Drain from water and place on the baking sheet
  6. Use the bottom of a cup or glass to smash the potatoes carefully
  7. In a small bowl, mix the olive oil, garlic powder, sea salt and black pepper
  8. Pour the mixture over the potatoes and turn to evenly coat
  9. Sprinkle cheese on top of the potatoes and bake for 30 minutes (rotate tray halfway through)
  10. Remove from oven and let cool slightly before serving with desired main (I love serving with my Oven-Baked Paleo Veggie Chicken Nuggets or Buffalo Blue Cheese Stuffed Meatloaf

Notes

*Store leftovers in the fridge for 5 days and reheat in skillet, oven or microwave
