Vegan + Paleo Pumpkin Mousse Parfaits! These are so easy to make (only 5 ingredients) and they are healthy and absolutely delicious.

Ingredients

Scale
  • 1 cup coconut yogurt (something thick and creamy works best)
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Topping ideas: coconut whip, granola, nut butter

Instructions

  1. In a large bowl mix together ingredients until smooth (you can also add this to a blender!)
  2. Once creamy, add to tupperware and put in fridge for a bit (or eat right away) and serve slightly cool with desired toppings

*Store in fridge for 5 days
