Raise your hand if you are an absolute granola addict!?!

Literally raising my hands and feet because I am probably the most obsessed human when it comes to granola. It is one of the foods I eat every single day. I bring a bag with me everywhere where I travel. And I am always snacking on it throughout the day. Plus I love leaving mine in the fridge so it stays extra crunchy guys. Call me crazy but is such a game changer to keep it in the fridge.

There are so many ways to you eat this granola. And it is the best nut-free recipe ever. If you can’t eat nuts, you know it’s not easy to find a nut-free option out there. And this homemade one will give you enough to last a couple of weeks. Or if you are me – about a week or so. I have no control when it comes to having a jar of this on the counter. It is truly the food I just graze on all flipping day. And it tastes killer with your favorite yogurt, on top of ice cream, sprinkled on some banana bread, anything!

How to make extra clustery granola:

  1. Preheat the oven to 350 degrees and line a large baking sheet with parchment paper
  2. In a large bowl, mix together the oats, coconut, flaxseed meal, chia seeds and cinnamon
  3. In a small bowl, mix together the coconut sugar, maple syrup, coconut oil, hot water and vanilla extract
  4. Pour the wet ingredients onto the dry ingredients and mix well to evenly coat
  5. Add the granola to baking sheet and press down so the ingredients are in one layer, stuck together
  6. Bake in oven for 15 minutes then rotate tray and bake for another 15 minutes
  7. Allow the granola to cool for for a few then break the large cluster into smaller pieces and enjoy!

Notes

*Store in airtight container for up to a week on counter or a month in the fridge

  1. Hello, how come the instructions refer to chia seeds and pecans but are not in the ingredient list? do you need this?
