This Vegan Peanut Butter Cup Mousse is going to be your new go-to recipe! made with 6 ingredients that are gluten-free, no refined sugars and still tastes so indulgent and rich!
I always think of mousse as this fancy recipe to make. But little did I know I could accidentally make a mousse in the bender while testing new ice cream bars.
We’ve been loving this vegan chocolate peanut butter mousse recipe. It is so easy (really too easy) to make too. And you can find me blending this after lunch these days so it is the perfect consistency to have for dessert later. And my husband and I fight over it so I have been doubling the recipe when we make it!
This version has much much less sugar than the classic mousse, but all of the flavor and it is also vegan and gluten-free.
Tip: make a double batch of this so you have extras! This stays good in the fridge for 5 days
What ingredients are in vegan chocolate peanut butter cup mousse:
- Dark chocolate bar – use any of your favorite chocolate! And code RACHL for 20% off this one!
- Coconut oil – just a little to melt the chocolate with
- Non-dairy milk – I prefer full-fat coconut milk so it extra creamy too! But really any non-dairy milk works
- Cacao powder – or cocoa powder works
- Maple syrup – can also use a honey as well
- Creamy peanut butter – the creamier the better but you can use a chunky PB if you want a crunch
How to make EASY mousse in a blender:
- Melt chocolate and coconut oil in microwave in a bowl or over stovetop in pot
- Add ingredients to a blender and blend until smooth and creamy
- Add mousse to a tupperware, jar or anything that has a lid
- Swirl in more peanut butter on top if desired then add to fridge to set for at least 3 hours and enjoy!
Best tips for success making mousse:
- Store it in the fridge for at last 3 hours to ensure that it sets right!! Then store the rest in the fridge until you want to eat
- Use any dark chocolate you love. I personally prefer using one that is dark but milk chocolate works too
- For creamier mousse, I recommend using full-fat coconut milk but I have made this with flaxseed milk and it’s delicious too!
- Feel free to double or triple this recipe if you want to make a larger batch
- This is my 3 year old’s favorite dessert! And it is lower in chocolate compared to the traditional mousse recipe
