- 1 cup water – plus more as needed
- 1 large or 2 medium beets, scrubbed, ends removed and cut into wedges
- 2 large carrots, washed, peeled and cut into chunks
- 1 stalk celery, cut into chunks
- 1 large red apple, cut into wedges (core removed)
- a 1-inch piece of fresh ginger, peeled
- Juice from 1 lemon
Instructions
- In a large high-speed blender, add the beets, carrots, celery, apple, ginger, lemon and water
- Blend on high speed for about 1 minute or until smooth (no more chunks). Add more water as needed if too thick and use a wooden spoon to gently break down the veggies/fruit a bit more if needed
- Next strain the juice. Layer a mesh strainer over a large bowl and a cheese cloth and slowly pour the juice into the cheese cloth so all the juice is in the bowl and only pulp remains in the bag
- Then bring up the sides of the cheese cloth to squeeze the pulp over the bowl so more juice is extracted
- Squeeze the juice from the lemons into the bowl and stir
- Next pour the mixture into the shot glasses or large glasses using a funnel if needed. Serve immediately or store in fridge for 5 to 7 days.
