What Makes This Slaw Different?
Unlike traditional creamy coleslaw, this miso ginger peanut chicken slaw gets its incredible flavor from a homemade miso vinaigrette instead of mayonnaise. White miso adds rich umami flavor while fresh ginger, garlic, apple cider vinegar, and sesame oil create a dressing that’s bright, savory, and just a little sweet.
Combined with crunchy cabbage, carrots, peanuts, and juicy shredded chicken, every bite has the perfect balance of texture and flavor.

What Ingredients Are Needed
White Miso Paste: The star of the dressing! White miso has a mild, slightly sweet, savory flavor that adds incredible depth without overpowering the salad. It’s what gives this slaw that restaurant-quality taste.
Filtered Water: Helps thin the dressing so it coats every bite of the salad evenly. You can always add a little more if you prefer a lighter consistency.
Extra Virgin Olive Oil: I love using extra virgin olive oil because it creates a rich, silky dressing while adding heart-healthy fats. Use a good-quality olive oil since it’s a prominent flavor here.
Apple Cider Vinegar: Adds brightness and acidity to balance the richness of the miso and olive oil. It keeps the dressing tasting fresh and vibrant.
Sea Salt: Enhances all of the flavors in the dressing. Depending on how salty your miso is, you can always adjust to taste after blending.
Sesame Oil: Just a small amount goes a long way! Sesame oil adds that classic nutty, Asian-inspired flavor that pairs perfectly with the miso and ginger.
Honey: A touch of honey balances the savory flavors and rounds out the acidity without making the dressing sweet.
Ground Ginger or Fresh Ginger: Ginger adds warmth and a little zing. Fresh grated ginger has a brighter flavor, but ground ginger works beautifully if that’s what you have on hand.
Garlic: Fresh garlic gives the dressing another layer of savory flavor and pairs perfectly with the ginger and miso.
Cooked Shredded Chicken: Rotisserie chicken is my favorite shortcut for this recipe, but any cooked shredded chicken works. It’s an easy way to add plenty of protein and makes this slaw satisfying enough for a full meal.
Toasted Peanuts: Toasting the peanuts brings out their natural flavor and adds the perfect crunchy texture to every bite.
Fresh Cilantro: Cilantro adds freshness and a pop of herbaceous flavor that brightens the entire salad.
Green or Napa Cabbage: Both work well here. Green cabbage adds crunch, while Napa cabbage is a little softer and more delicate. Either one creates the perfect slaw base.
Red Cabbage: Adds beautiful color, extra crunch, and another boost of fiber and nutrients.
Carrots: Julienned carrots add natural sweetness, vibrant color, and even more crunch.
Green Onions: Green onions bring a mild onion flavor that ties everything together without overpowering the other ingredients. They add freshness and a little bite to finish the salad perfectly.

- Shredded chicken
- Toasted peanuts

- Red cabbage
- Julienne carrots
- Green onions
Step 3: Toss Everything Together
Pour the dressing over the slaw and toss until everything is evenly coated.
Serve immediately or refrigerate until ready to enjoy.
Rachel’s Tips
Use Rotisserie Chicken
This recipe comes together in minutes when you use pre-cooked rotisserie chicken. It’s one of my favorite shortcuts for busy weeks.
Toast Your Peanuts
Don’t skip this step! Toasting the peanuts brings out so much more flavor and makes the entire salad taste even better.
Slice Everything Thin
The thinner your cabbage and carrots are, the easier the salad is to eat and the better the dressing coats every bite.
Make the Dressing Ahead
The dressing can easily be made a few days in advance and stored in the refrigerator until you’re ready to assemble everything.

Easy Variations
There are so many ways to customize this miso ginger peanut chicken slaw.
Try adding:
- Shelled edamame
- Thinly sliced cucumbers
- Bell peppers
- Avocado
- Mandarins for sweetness
- Cashews instead of peanuts
- Shredded kale
- Crispy wonton strips if gluten isn’t a concern
You can even swap the chicken for grilled shrimp, salmon, steak, or baked tofu.
Storage Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days.
The cabbage stays surprisingly crisp, making this a great make-ahead lunch.
If preparing in advance, you can also store the dressing separately and toss everything together just before serving for maximum crunch.

Frequently Asked Questions
What is white miso?
White miso is a fermented soybean paste with a mild, slightly sweet flavor. It’s less salty than darker varieties and works beautifully in dressings, marinades, soups, and sauces.
Can I make this ahead of time?
Absolutely. This recipe is ideal for meal prep. Assemble everything a day ahead or keep the dressing separate until serving if you prefer extra-crisp vegetables.
Can I make this vegetarian?
Yes! Simply replace the shredded chicken with baked tofu, edamame, chickpeas, or even cooked quinoa for a satisfying vegetarian version.
Is this recipe gluten-free?
It can be. Just make sure you’re using a certified gluten-free white miso paste, as some brands contain barley.
Can I use bagged coleslaw mix?
Definitely. A bagged cabbage slaw mix is a great shortcut that saves even more prep time.
