Triple Layer Oatmeal Fig Bars that are gluten free, vegan and DREAMY!
The first time I ever ate a fig was in Croatia when I was 20 and let me tell you, I did not appreciate it as much as I would today. I looked at the guy like he was nuts offering me some weird wrinkled fat looking raisin (literally my thought process at that time). I ate it, loved it but was insanely cranking after falling off a raft in the water while trying to white water raft. Ya.. never happening again.
But when when I was chatting with my fam over at Nuts.com, I was craving ALL the figs. I asked them to send me some for our April recipe and seriously ate like 6 while recipe testing for this. I don’t even want to know my sugar intake that day but luckily eating figs is better than downing a cup of white sugar, right?
These Triple Layer Oatmeal Fig Bats are a DREAM. They have an oatmeal crust, sweet fig middle layer and are topped off with a lightly sweetened oatmeal topping. I felt like I was eating a glorified fig newton bar when I took a bite of my first bar (hence first because I ate 4 in 2 days).
Let’s just chat about Nuts.com a little bit more though because I’m not over them. Last week I was fortunate enough to co-host a completely amazing dinner with their team here in NYC. It was at Market Table in the West Village and I seriously want to relive that night again and again. And eat the menu 10 more times. I also asked handful of the attendees what their favorite nuts were. Honestly you would have thought I asked them to say if they love their Mom or Dad more. Everyone was stumped at first, it was so funny! My favorite nuts are brazil nuts (at least right now). I eat a handful everyday. Supposedly it helps combat cancer and dementia but don’t take that and quote me because I have just heard it hear and there.

WHAT YOU NEED
Rolled oats (gluten-free if needed)
Pitted dates
Raisins
Almond butter
Almond flour
Coconut oil
Coconut sugar
Lemon
Cinnamon
Triple Layer Oatmeal Fig Bars (vegan and gluten-free)
- Prep Time: 10 mins
- Cook Time: 40 mins
- Total Time: 50 mins
Yield: 15 bars 1x
Ingredients
- Bottom oatmeal layer
- 1.5 cups rolled oats (gluten-free if needed)
- 1/2 cup pitted dates (from Nuts.com)
- 1 cup raisins (from Nuts.com)
- 1 tablespoon creamy almond butter
- 2/3 cup almond flour (do not recommend another flour)
- 2 tablespoons coconut oil, melted and cooled
- 2 tablespoons coconut sugar
- 1 teaspoon baking powder
- Fig filling:
- 18–20 dried figs (from Nuts.com)
- 1/2 lemon, juiced
- 1 teaspoon cinnamon
- Top oatmeal layer:
- 1/4 cup rolled oats
- 1 tablespoon almond flour
- 1 tablespoon coconut sugar
- 1/2 tablespoon coconut oil
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350 degrees
- Spray an 8×8 baking dish to grease or line with parchment paper
- In a medium bowl add figs and cover with boiling hot water and let it sit for 10 minutes
- In food processor, add bottom oatmeal layer and pulse until ingredients are combined
- Add to 8×8 baking dish and press down so it is an even layer
- Next strain the figs from hot water and add the figs to food processor
- Add lemon juice and cinnamon and pulse until a jam-like consistency
- Add on top of the oatmeal layer and even spread (I used a spatula)
- In a small bowl, combine the top oatmeal ingredients and mix well with a spoon
- Evenly sprinkle on top of fig layer and press down
- Bake in the oven for 35-40 minutes, let the bars cool then cut and enjoy!
- *Will stay good for 5-7 days or you can freeze for longer!

These look amazing!! I have a severe nut allergy so I cannot use almond flour. I know you don’t recommend any substitutions, but do you think oat flour might work?

Such a great taste! Chewy and sweet with a little crunch, these bars will satisfy your sweet tooth!! Unfortunately, the bottom layer to my fig bars kept crumbling off… What am I doing wrong?

hmmm so odd! that hasn’t happened before to me but just make sure the bottom layer isn’t too dry or crumbly, if it is just add some more dates when you are making it 🙂

Try cutting up the figs and soaking them for 30 minutes before throwing them in the food processor. Maybe the raisins, too. That’s typically called for in nut-based crust recipes and helps the crust hold together better.
