If you love magic cookie bars and you love apple pie – I hope you are ready for this! I am obsessed with these 5 ingredient apple pie magic cookie bars. They’re crunchy, sweet, very easy to make and they are a great vegan and gluten-free dessert snack to make.

These are 100000x easier to make than apple pie or magic cookie bars too. So you can enjoy every taste of magic cookies without all the labor in the kitchen to make it. I made these after sharing the Viral Magic Cookies because they so needed a fall spin to them. I prefer apple things over pumpkin and I love the crunch of the graham cracker with the apple pie spices.

You know I love a good nostalgic recipe too and these just bring me back to college days. I used to have magic cookie bars all the time in college (our school made the best ones!). But I am sure those are a lot more sugary and loaded with ingredients I’d prefer not to eat daily. These though, they’re healthier, still delicious and such a dreamy snack to make for that afternoon sweet craving.

What ingredients you need to make Apple Pie Magic Cookies:

  • Cashews – you can use raw or salted cashews, either works for this!
  • Unsweetened coconut flakes – I like to do unsweetened rather than sweetened since the condensed milk is sweeter too
  • Dark chocolate chips – you can also use milk chocolate or semi-sweet if you prefer too
  • Graham crackers – I love adding these in for an extra crunch
  • Sweetened condensed coconut milk – please don’t sub this with another milk. It has to be condensed milk
  • Apple pie spice – blend of cinnamon, nutmeg and all spice

How to make these fall-inspired Magic Cookies:

  1. Preheat oven to 350 degrees F and line a large baking sheet with parchment paper
  2. In a large bowl, mix together cookie ingredients until fully combined
  3. Scoop about 1/4 batter onto sheet to form cookie. Make sure the ingredients are pressed together then repeat for remaining batter (the bottom of the cookies spread a bit from the milk)
  4. Bake in oven for 15-17 minutes or until just about golden
  5. Allow the cookies to cool for a few then remove from sheet (or they will fall apart!)

  • Can I use other nuts or ingredients? Within reason. I personally haven’t tested another recipe here but some easy swaps could be walnuts instead of cashews, raisins instead of chocolate chips. Do not sub the condensed coconut milk with anything besides condensed milk.
  • What is the best way to store these clusters? In the fridge for 5 days or freezer for 2 months. I love having them cold. But you can let them come to room temp or warm up for a few seconds if preferred.
