Raise your hand if you used to LIVE on those cutie Little Bites mini muffins!? I for one was obsessed. The chocolate chip and blueberry were staples over here. As were blueberry munchkins from Dunkin’ Donuts. Truly the most underrate flavor in my opinion. Whenever my school had munchkins and someone did order the blueberry ones for the box, I was seriously not a happy camper.

Now let’s dive into these mini muffins though. They are adorable and perfect for kids, adults, anyone!! And they are super easy to make too. They are gluten-free, nut-free and dairy-free. And they are also super adaptable to really use whatever you want. For example you can use a dairy-based yogurt if you prefer. Or use a spelt flour instead of gluten-free oat flour. Or use flax egg instead of regular egg.

That is what I love about this recipe.. besides how delicious and fluffy and prefect they are of course!

I cannot wait to hear what you guys think of these muffins. Comment below and share when you make them!!

  2. Entire family loved these. I happened to have Sigi’s lemon yogurt and it added a little lemon flavor which was great. Will definitely be adding this to our regular muffin rotation!
