I have one word for you guys: CHEESEBURGER. TACOS. 😍🍔🌮

YES, you read that right!!! We are making cheeseburgers… but in taco form. And trust me when I say, these are next-level, drool-worthy, weeknight dinner GOLD. They’re everything you love about a classic burger — juicy beef (or chicken or turkey!), melty cheddar, ketchup, mustard — all stuffed into a crispy little tortilla situation that you bake to golden perfection.

Seriously… you need these in your life. Your family needs these in their life. Your dog probably needs a smell of these too 😂 (jk, but not really).

Let’s get right into it!!

Ingredients You’ll Need to Make Cheeseburger Tacos:

  • Olive oil – We’re using good old olive oil to sauté our onion and zucchini and help everything get nice and flavorful! Plus you’ll brush or spray it on the tortillas before baking to make them golden and crispy. A pantry staple for sure.
  • White onionOnion brings the savory flavor we all love in burgers. It gets soft and slightly sweet when it cooks — sooo good. I love using white onion here because it’s a little milder, but yellow onion works too if that’s what you have!
  • ZucchiniSneaky veggie time! 🥒 Shredded zucchini melts right into the beef so you get some extra nutrients without even noticing it. Plus it keeps the meat super juicy and moist — no dry tacos here!!
  • Ground beef (or sub chicken or turkey) – The heart and soul of the cheeseburger taco!! I usually go for grass-fed ground beef because it’s extra flavorful, but ground turkey or chicken totally work too if you want something lighter. This is your protein boost and the main filling!
  • KetchupBecause what’s a cheeseburger without ketchup?! 🍅 It brings that sweet, tangy burger-shop flavor we all know and love. Plus it helps bind everything together and keeps the filling juicy.
  • Mustard – Mustard is the secret sauce to making these taste exactly like a burger. It adds that little zing and brightness to balance the richness of the beef and cheese. Trust me — don’t skip it!!
  • Shredded cheddar cheeseSay hello to cheesy melty goodness 😍🧀Cheddar melts like a dream and gives that classic cheeseburger flavor. You can shred your own block (highly recommend for best melt factor!) or use pre-shredded if that’s easier.
  • Tortillas (gluten-free if needed)We’re swapping the burger buns for tortillas! Flour tortillas are easiest to work with because they’re soft and foldable, but you can 100% use a gluten-free option if needed. Just remember to warm them up first so they don’t crack when folding!

How to whip up the BEST Cheeseburger Tacos:

Here’s the lowdown on everything we’re using and why each one matters for making the most epic tacos ever!! 👇👇

  1. 1. Preheat the oven to 400 degrees F and line a baking sheet with parchment paper (or grease it a little with olive oil)
  2. Warm up your olive oil in a large skillet over medium heat. Toss in your diced onion and let it cook for 2-3 minutes until it gets a little soft and fragrant. Then add your shredded zucchini (yesss we’re sneaking veggies in here like the geniuses we are). Cook for another 2-3 minutes.
  3. Add in your ground beef, turkey, or chicken — whatever you’re feeling! Break it up with a spatula and cook until fully browned and no longer pink. If there’s any extra grease, drain it out.
  4. Stir in the ketchup and mustard. It’s gonna smell INSANE. Give it a taste and add more ketchup or mustard if you’re feeling saucy.
  5. Warm your tortillas (VERY important!). Listen up because this part is everything: you have to warm your tortillas a little so they don’t crack when you fold them. I usually warm in microwave for 30 seconds (I do about 4 at a time). Keep them in between damp paper towels to stay nice and pliable!
  6. Fill each tortilla with 2 to 3 tablespoons of the beef mixture. Sprinkle a generous pinch of shredded cheddar on top. Fold the tortilla over the filling and place it seam-side down on your baking sheet. Repeat with the rest of your tortillas!
  7. Brush or spray the outsides of your tacos with a little olive oil (this helps them get crispy and golden and PERFECT).
  8. Bake in the oven for 10-12 minutes until they’re looking crispy, cheesy, and completely irresistible.

Some tips on making these tacos:

  • WARM. THE. TORTILLAS. I can’t stress this enough! It makes folding so much easier and prevents rips.

  • Use freshly shredded cheese if you can — it melts so much better than pre-shredded!

  • Sneak in more veggies if you want! Finely diced mushrooms or carrots would be so good.

  • Serve them hot hot hot right out of the oven for max gooey cheese vibes.

Some other fun ideas if you’re feeling creative:

  • Bacon cheeseburger tacos: add cooked bacon crumbles to the beef before assembling! 🤤

  • Spicy cheeseburger tacos: mix in some chopped jalapeños for a kick.

  • Cheeseburger quesadillas: layer the beef and cheese between two tortillas and cook like a quesadilla!

  • Low-carb hack: serve the filling in lettuce cups for a lighter option.

How to store and reheat:

If you somehow have leftovers (you’re a stronger person than me), here’s how to save them:

  • Store in an airtight container in the fridge for up to 3 days.

  • Reheat in the oven at 350 degrees for about 5-7 minutes until warmed through and crispy again. Air fryer works too!
