These High Protein Turkey Black Bean Enchiladas are one of my favorite family dinners to make. They are filling, gluten-free, delicious and made with healthy ingredients.
We love enchiladas in our house! These turkey black bean enchiladas are high in protein, taste so good and packed with nutrients and flavor. I love how this dish feeds my family and it is satisfying to everyone. These enchiladas are packed with protein, healthy fat and you can really customize them for what you are craving.
I love how you can make these spicy if you wanted to by adding some jalapeños or a spicier enchilada sauce. I make these more on the mild size since my kids eat them too, but you can modify to fit your preferences.
There is something about enchiladas that makes them so cozy and comforting. It’s one of those recipes that I make again and again. I also love how this recipe is just so simple to make. It only requires about 15 minutes of actual effort. And if enchiladas sound intimidating to you to make, I promise you can make these.
I typically use almond flour tortillas when I make these. I love how nutrient dense they are and how they are also gluten-free for my husband. Finding good gluten-free tortillas is not easy. I always go with almond flour ones for tasty, quality and they’re easy to find at your local grocery store.

What ingredients you need to make turkey black bean enchiladas:
- Ground turkey – if you don’t love turkey, try ground chicken or beef
- Refried beans – if you don’t have refried beans, you can also use regular black beans too
- Garlic cloves – if you don’t have garlic cloves, you can omit but I love adding for flavor
- White onion – I usually use a sweet white onion in this recipe but use your favorite! Red onion would also work well
- Taco seasoning – use your go-to taco seasoning blend
- Flour tortillas – I used almond flour tortillas
- Shredded cheese – I used cheddar
- Enchilada sauce – use your go-to store-bought sauce or homemade if you prefer
- For topping: cilantro, sour cream, chopped tomatoes, guacamole
How to make these turkey black bean enchiladas:
- Preheat oven to 375 degrees F
- Grease a large skillet with oil and add the onion and garlic and cook for about 5 minutes or until fragrant
- Add in ground turkey and cook until no longer pink
- Add in the beans, water and taco seasoning and cook all together on medium heat for about 5 more minutes
- Warm tortillas in microwave for about 30 seconds so they are pliable and don’t break
- Spread spoonful of meat and bean mixture onto tortilla
- Top with cheese and roll, seal side down
- Add to a greased baking dish and repeat for remaining ingredients
- Pour enchilada sauce on top then sprinkle cheese on top
- Bake for 20 to 25 minutes in oven or until cheese is bubbly and melted
- Enjoy with desired toppings while warm
FAQs and tips on making these high protein enchiladas:
- What other proteins can I use instead of turkey? Really any ground meat can work. Chicken or beef are my two other preferences for this recipe.
- Can I use corn tortillas? I prefer flour tortillas but you can use corn tortillas if you prefer. Don’t skip warming them up! They break easily.
- Do these enchiladas freeze well? Yes! These would be great frozen. I would cook then freeze after cooking them.
- What do you serve these enchiladas with? Some salsa, guacamole, sour cream and cilantro! Anything you’d like.
- Is this dish spicy? It is if you use a spicy enchilada sauce. I usually use a mild one so it’s not too spicy. My 5 year old loves these!
