You guys are doing to think I am crazy. But I never had French onion soup before Jordan. He is the the KING of French onion soup. He’d order it every time we saw it on a menu and he is obsessed. Bread + cheese + soup = all of his favorite things in one recipe (besides bacon – but maybe we’ll make that happen soon!!).

And for soup week – we first made Trader Joe’s Copycat Pumpkin Bisque then Easy 10-minute Wonton Soup! so today we 100% HAD to share a French onion soup recipe with you guys. Jord was freaking out over the idea and basically made me run to the store and pick up all the ingredients so we could make it ASAP. And as soon as we saw that cheese pull when we took a bite, he knew game over  and mission was accomplished.

This is 100% one of those recipes that you guys are going to crave over and over again. And yes – making French onion soup is more of a process but we simplified it up a bit for you. So it should be easy for you to make whenever the craving strikes fam! And don’t forget to make some of the other soup recipes we are making this week for #rachLsoupweek baby.

What ingredients are in this healthier french onion soup:

  • 2 large sweet onions, sliced into thin rounds and then halved
  • 1 tablespoon butter or oil
  • 3 cloves or garlic, minced
  • Red wine (about 1/2 cup or so!)
  • 32 ounces chicken or beef broth (or use veggie for vegetarian)
  • Pinch of thyme
  • 1 bay leave

How to make this easy and delicious french onion soup!

  1. Grease a large pot with a little oil then add the onions and begin to cook over medium heat
  2. Let them cook for about 10 minutes or so, until they caramelize
  3. Add in garlic and mix and let it cook for another 10 minutes or so and lower the heat as it cooks
  4. Add in the red wine to deglaze the bottom of the pan (you may need more than 1/2 cup)
  5. Next add in broth you are using and bring to a boil then simmer and cook for another 30 minutes or so until soup thickens
  6. Spoon the soup into 2 small ramekins and add a slice of bread to each followed by cheese and broil in oven for a couple minutes or until the cheese boils
  7. Enjoy immediately!

  • 2 slices gruyere cheese
  • 12 tablespoons parmesan cheese

Notes

*Store leftovers in fridge but I recommend enjoying when you make! Or make soup ahead of time then add in bread and cheese before eating.
