You guys are going to go NUTS when you see how easy this recipe is. Like real deal easy peasy dinner that dirties only 1 pot and comes together in basically 20 minutes.

This is one of those meals you are going to keep coming back to over and over again. It is delicious and one of Jordan’s personal favorites to make. As he likes to say “this sh!t is restaurant quality” and to be honest – it really is. The flavors and texture are on point and you will think you are eating dinner at some fancy Italian restaurant. Meanwhile you could be sitting in your apartment with your 2 babies like we are – ha!

Ezra also gobbles this recipe right on up. He is the ultimate “pat-ta” king over here. As soon as he sees it in the store, he goes nuts. But then again he goes nuts for most food haha!

What ingredients you need to make this easy one pot spaghetti:

  • Olive oil
  • Garlic cloves, minced
  • Small onion, chopped
  • Cherry tomatoes
  • Spaghetti of choice (gf if needed!)
  • Chicken or beef broth (about 2 cups)
  • Filtered water
  • Sea salt and freshly ground black pepper, to taste
  • Parmesan cheese (or less depending on preference)
  • Parsley leaves
  • Basil leaves

How to make this delicious and healthy one pot pasta: 

  1. In a large sauce pan or pot warm the oil over medium heat
  2. Add in the garlic and onion and cook for about 3 minutes or until fragrant
  3. Add in the tomatoes and cook for another 3 minutes or so
  4. Next add in the spaghetti and half the broth and cook over medium heat then add the remainder of the broth and water as the spaghetti cooks (you may need more!) for about 8-10 minutes (time will vary based off the spaghetti you use)
  5. Turn heat to low and add in the sea salt, black pepper, cheese, parsley and basil and mix well
  6. Serve while warm and add more cheese and seasonings on top if desired!
