This my family’s favorite recipe right now!! A creamy zucchini pasta sauce that is filled with simple ingredients and comes together in 10 minutes.
It can feed you, your kids and anyone else you are cooking for. You can also add in whatever protein you’d like to the dish like chicken or meatballs. I love adding it in there for an extra boost. Or enjoy this as a simple vegetarian meal – whatever you prefer to do.

What ingredients are in this creamy zucchini pasta recipe:
- Extra virgin olive oil – I really see the difference using a high quality oil here. Avocado oil could work too but I prefer a nice evoo.
- Garlic – fresh garlic cloves are best for flavor but you can use garlic powder too.
- Zucchini – this is such an easy way to get zucchini into anyways diet!! It adds the most nutrients yet not much flavor to the sauce.
- Shallots – these are the best. I love using shallots instead of onions in my pastas and sauces.
- Parmesan cheese – freshly grated cheese works best here!
- Fresh basil – LOVE adding this in for flavor!
- Full-fat coconut milk – it adds such a creamy consistency like cream would except much healthier!
How to make creamy zucchini sauce:
- Warm a large skillet with oil and add in the garlic, zucchini and shallots and cook for about 8 minutes or until sautéed a bit and zucchini is *just* about to get soft
- Remove from heat and add to blender or food processor with cheese, basil, coconut milk, pasta water and salt and pepper to taste
- Blend until smooth and creamy then enjoy on top of your favorite pasta!
FAQs about zucchini pasta sauce:
- Can you taste the zucchini in the sauce? Not to me! It has such a subtle flavor and the other ingredients like garlic, shallots and cheese add more flavor than anything else.
- Is this recipe good for kids? Yes! My kids absolutely love this recipe. It is easy to make and the devour it – even my 16 month old who is so picky!
- Can you save this sauce if you have leftovers? Yes! It doesn’t brown or anything. It stays fresh in fridge for 5 days. Or you can freeze it for 2 months.

Ingredients
- 2 tablespoons extra virgin olive oil
- 2 garlic cloves, minced
- 3 cups zucchini, cut into 1/2 inch rounds
- 2 tablespoons shallots, diced
- 1/2 cup parmesan cheese, shredded
- 1 cup full-fat coconut milk
- Handful of fresh basil leaves
- 1/2 cup pasta water (from when you make the pasta or just use warm water)
Instructions

Notes
*Store leftovers in fridge for 5 days. It won’t brown the sauce! You can also freeze this sauce and enjoy within 2 months.

really good,we very much enjoyed having this with some pasta. The only two things were that it took a lot more than 10 minutes and it did taste a lot like coconut
