Pasta is one of those meals we make for dinner all the time over here. it is so easy to make for the kids especially and I send Ezra to school with leftovers a lot for his lunch.

Pasta Primavera has turned into on of my family’s favorite dishes. My 1 year old loves the pasta with the peas and tomatoes. Era loves the peas and the asparagus and they’ll eat anything when it is covered in cheese. So if you’re looking for dinner recipes for your entire family to eat – I highly recommend trying this one. Plus adding some protein too if you want to bulk it up a bit.

  • Gluten-free pasta – or any pasta you prefer to use!
  • Extra virgin olive oil – you could also use an avocado oil but olive oil works best
  • Garlic and sweet onion – these add a ton of flavor to the pasta
  • Cherry tomatoes – I buy a container of organic from the store and they are my kid’s favorite!
  • Zucchini – we use the green zucchini for this usually but yellow works too.
  • Asparagus – chop the bottom part off – about 1/2 inch or so!

  • Broth – chicken or veggie works

Ingredients

  • 8-ounce box gluten-free pasta
  • 2 tablespoons extra virgin olive oil
  • 2 clove garlic, minced
  • 1 medium sweet onion, chopped
  • 1 cup cherry tomatoes
  • 1 cup zucchini, sliced in quarters
  • 1/2 bunch asparagus
  • 1 cup frozen peas
  • 1 cup broth (chicken or veggie works)

Instructions

  1. Boil water and cook pasta per directions
  2. Warm a pan with oil and sauté garlic and onion for 2 minutes
  3. Add in tomatoes to skillet and let them get blistered about 2-4 minutes
  4. Next add in zucchini, asparagus and peas, let cook for 2 minutes
  5. Add in the  broth and bring to a simmer and let cook for 5-10 minutes
  6. Mix in the pasta and grate fresh parmesan on top and enjoy!
