The Best Ever Healthy Chipotle Tacos! Easy to make taco recipe that comes together in just 20 minutes. Plus it is gluten-free and a family favorite to make.
Tacos are forever a staple in our weekly dinner rotation over here. We make them every single week. No matter what kind of tacos they are – they are always a hit. Breakfast tacos are an easy go-to for sure. As are these chipotle turkey ones that Ez and I keep making on repeat.
I love that this dish comes together so easily. And you easily make your own taco seasoning to add into the meat. Plus you can also use whatever ground meat you want like chicken or beef if you don’t have any turkey on hand. I love adding in some cheddar cheese into the tortillas before baking them in the oven and getting them extra crispy.
You can use soft shell or hard shell tortillas if you want. But the directions below are if you use soft and bake in the oven. Heck you can even take the taco meat and add it on top of a salad with your favorite chips or make this into a burrito bowl – so many options!

What ingredients you need to make healthy turkey chipotle tacos:
- Avocado oil or olive oil
- White onion
- Ground turkey – or use ground chicken or beef!
- Chunky salsa – I used medium spice
- Chipotle powder
- Smoked paprika
- Cumin
- Garlic powder
- Onion powder
- Sea salt and black pepper
- Corn tortillas of choice
- Toppings: shredded cheese, salsa, guacamole, sour cream, cilantro for garnish!
How to make the best healthy tacos:
- Preheat oven to 425 degrees
- Warm a large skillet over medium heat and add oil
- Sauté the onion over medium heat for about 5 minutes or until it starts to golden a bit
- Add in the meat and seasonings and mix well so everything is evenly combined
- Cook on medium heat for about 5-7 minutes or until meat is cooked fully through
- Warm the tortillas in microwave for about 30 seconds so they are pliable then lightly grease them
- Lay each tortilla flat onto the baking sheet and add a spoonful of cooked meat to half the tortilla, sprinkle some cheese if desired then gently fold tortilla on top if you’d like (or you can cook open faced too – when I fold mine I usually wrap them in foil to help them stay in form!)
- Bake in oven for 8 minutes then gently flip and bake for another 5 minutes or so (I like to spray mine on top with oil so they get crispy)
- Serve with desired toppings while warm!

- 2–3 teaspoons chipotle powder (I usually do 2 for Ez and I)

Do you mix the 3/4 cup of salsa into the meat while its cooking, with seasonings? Or is it just a topper after?
