So Jord and I are full on OBSESSED with making schnitzel now guys. We are hooked after I had some at a local restaurant. But Jordan was bummed because it wasn’t gluten-free and he couldn’t try it.
I am shook over how good this turned out. And how easy it is to make at home. Plus it’s still super flavorful and and tasty even though it’s healthier than the usual schnitzel recipe. When we were making it, our entire kitchen smelled so good and our stomachs were growling. The second this came out of the oven, we went nuts eating it over the pan and eventually plated it like civilized humans.
I have a feeling you guys are going to go crazy over this recipe. It is definitely one you will want to save and make over and over again.
What ingredients are in this healthy schnitzel recipe:
- Large chicken breasts (about 1/2 lb chicken)
- Egg
- Tapioca flour or arrowroot flour
- Sea salt and black pepper to taste
- Crushed up grain-free crackers (about 1 cup crackers)
- Almond flour
How to make paleo chicken schnitzel in the oven:
- Preheat oven to 400 degrees
- Grease a small baking dish and add in the crushed up crackers and almond flour and mix
- Toast in the oven for 5 minutes then remove and set aside
- While it toasts, pound the chicken down so it is about 1/2 inch in thickness
- In a shallow bowl, whisk together egg, tapioca flour and sea salt and pepper
- Dip a piece of chicken in the egg mixture and evenly coat then add into baking dish with the toasted breadcrumbs and evenly coat in each side
- repeat for the next piece of chicken then bake in the oven for about 15 minutes or until chicken is fully cooked
- Remove from oven and serve with desired sides

Notes
*Store leftovers in fridge for 5 days. Reheat on stovetop for extra crispness. I also love serving this cold on top of a salad
