Ever since going away last week, I have been on a serious seafood binge. Loving all the things salmon, shrimp, lobster and more. And full on taking advantage of summer-inspired recipes to make and enjoy before the season ends.

This shrimp ceviche is so incredibly easy to make. And a must make before summer is over. It is really easy to make for an appetizer to serve or a light meal. But don’t forget your favorite tortilla chips and crackers. LOVE to scoop this ceviche up and the added crunch is delicious.

What ingredients are in this easy shrimp ceviche:

  • Raw shrimp – peeled and deveined. I had frozen shrimp so I used that for this and defrosted it first.
  • Tomatoes – we used a fresh tomato from our garden and it was amazing in this!
  • Cucumber – I prefer seedless cucumber if you can find so it doesn’t get in the ceviche
  • Shallot – I used shallot instead of red onion and I prefer it. But if you like red onion, go for it!
  • Jalapeño – totally optional for spice but it gives it a little kick
  • Cilantro – finely chop up and it adds so much flavor
  • Limes – lots and lots of limes for this recipe!

How to make shrimp ceviche:

  1. Bring a large pot of salted water to a boil over high heat
  2. Add in shrimp and cook for about 3 minutes over medium heat
  3. Drain the shrimp and set aside until cool enough to handle, about 10 minutes.
  4. Chop the shrimp into 1/2-inch pieces and place in a large bowl. Add the lime juice, tomatoes, shallot, jalapeño, cilantro, and salt, and toss to combine
  5. Cover and refrigerate for at least 1 hour or up to 4 hours
  6. Just before serving, dice the avocado, add to the ceviche, and gently toss to combine
  7. Serve with tortilla chips or crackers

  • What is shrimp ceviche made of? Ceviche is typically made with raw seafood, lime juice, herbs, onion and other flavorings. The common theme is that the seafood is “cooked” in the lime juice, but I preferred to cook my shrimp instead.
  • Is the shrimp cooked? Traditionally the shrimp is “cooked” in lime juice in the fridge to marinade. I prefer actually cooking the shrimp though 🙂
  • Can you make shrimp ceviche ahead of time? Yes the ceviche needs to marinate so you always do! I do like to prep and eat the day of though as it tastes best.

  • 1 lb raw shrimp, peeled and deveined
  • 1/2 cup tomatoes, chopped
  • 1 small cucumber, chopped (about 1/2 cup)
  • 1/2 shallot, peeled and finely chopped
  • 1 jalapeño, deseeded and chopped
  • 4 tablespoons cilantro, finely chopped
  • 3 limes, juiced
  • Sea salt to taste
  • 1 avocado, cubed
