These crunch bars are SO good!!! One of my personal favorite recipes I make again and again. They’re crunchy, peanut buttery, chocolatey and incredibly easy to make. You take a bite of these and you are in heaven. Especially if you love peanut butter cups and crunch bars. It’s the best of both worlds because it has the flavor of a peanut butter cup but consistency of a crunch bars.
The traditional brunch bars are filled with additives, tons of sugar and oils to make a product as simple as this. But my version has 3 ingredients and takes 5 minutes of actual effort to make. And they are gluten-free, vegan and much lower in sugar than the store-bought version. And since I use coconut sugar-sweetened chocolate chips, these are refined sugar free.
This is the type of recipe that you will always want to have in your freezer. They hit the spot when I grab one after lunch or dinner or whenever I am craving something sweet.
I share these with my kids who also are absolutely obsessed with them. They call it their “freezer candies” and when we are out of them, Ezra always demands – yes, demands – me to make more. He has the same sweet tooth as his mama!
I cannot wait for you guys to try these. I hope you love them as much as we do. You can make them into bars or bites too. Bite-sized is better portion control, but then I just find myself going back to more ha!
What ingredients you need to make these crunch bars:
- Creamy peanut butter – if you don’t love peanut butter or have an allergy, use almond butter instead. Really any nut or seed butter can work
- Dark chocolate – or use your go-to chocolate. It can be semi-sweet or milk chocolate if you prefer too
- Brown rice crisp cereal – any rice krispie – type cereal works best for these! Use your favorite kind
How to make chocolate peanut butter crunch bars:
- Melt chocolate in microwave or over stovetop. Depending on the chocolate you use, you may need to add coconut oil to help to melt
- Mix in the peanut butter to fully combine
- Next add in cereal and mix all together so the cereal is fully coated in the chocolate peanut butter mixture
- Line a loaf pan or baking dish with parchment paper then add the crunch bar batter to the pan and spread across
- Add to fridge or freeze to set until firm
- Cut into bars/bites and enjoy!
FAQs and tips on making these chocolate crunch bars:
- Can you use any chocolate you want for these? Yes! Dark or milk chocolate can both work here. I prefer dark chocolate taste wise but do what you prefer.
- How long do these stay good in the freezer for? About 2 months in the freezer but they never last that long here 🙂 They don’t melt easily so you can also keep in fridge as well.
- Are these a good snack for kids? Yes! My toddlers love them and ask for them for dessert all the time. You can also add in any other mix-in’s like sprinkles too.
