This Peanut Butter Banana Date Bark is a MUST try! It is a combination of so many of my favorites. Banana, chocolate, peanut butter and it has an epic crunch from the granola. Such a delicious and healthy sweet snack to make.

This bark is absolutely amazing!!! It has a base of bananas and dates, layers of peanut butter, granola and chocolate on top. When you combine these layers, you have the most epic and delicious treat that reminds me of like a snickers ice cream bar with some caramel and peanut butter.

You know I love snacking barks. And you know how much I love all things peanut butter and chocolate so you can only imagine my obsession with this banana date bark.

This recipe is a staple in my freezer right now. It’s been my go-to after lunch for a sweet snack and I love how it’s actually pretty nutritious from the dates, banana and filling from the peanut butter and granola.

Once you make a batch of this and snack through it, you will be obsessed with it too. This recipe is a 12/10 for me and I just love how easy it is to make. Layer everything tougher, add to freezer, break into pieces and enjoy!

What ingredients you need to make Banana Date Bark:

  • Medjool dates – pitted and soften dates! If they are too firm, it won’t work well
  • Fresh bananas – sliced and you don’t want them too ripe!
  • Creamy peanut butter – you can also use another nut butter if you prefer but peanut butter is my favorite for this
  • Granola of choice – I use store bought or make my own granola
  • Chocolate chips – can be milk or dark chocolate, whichever you prefer

How to make Banana Date Bark:

  1. Start by slicing the bananas into quarter-sized pieces 
  2. Next slice the dates open (make sure pits are removed)
  3. Line a baking sheet with parchment paper and add bananas and the dates to the sheet
  4. Add the peanut butter across and spread it across with a spatula 
  5. Next sprinkle the granola across the bark
  6. Add the chocolate chips and coconut oil to microwave-safe bowl and melt in 30 second increments or until melted (stir in between!)
  7. Next pour the melted chocolate on top of the bark then add to freezer or fridge to set for about 30-60 minutes
  8. Break apart once set and enjoy!

Tips and FAQs on making this healthy bark recipe:

  1. Can I use dates with pits in them? Yes but you will need to remove the pits! Otherwise the date bark won’t be edible.
  2. What kind of chocolate works best? Honestly you can use any chocolate you are craving. I love using dark chocolate here but milk chocolate or even semi-sweet can work.
  3. Is this a healthy dessert to eat? “Healthy dessert” kind of sounds like an oxymoron to me but this is definitely a great dessert option using wholesome ingredients. It is much simpler than the chocolate candy bars like Snickers or Twix!
  4. Can I switch up the ingredients? Of course! Add some other nuts, coconut flakes, dried fruit, anything you want. You can customize this to work for your tastebuds.
