Oh my gosh this bark is *delicious*. It is crispy, crunchy, sweet and the perfect snack or breakfast to eat. You can eat it as is, add to yogurt bowls, dip in some milk or pair with some fresh berries.

It is also so easy to make, takes 5 minutes of actual effort and its 10x better-for-you then the granola barks found in stores. I also did a peanut butter cup twist to this because it’s my favorite flavor combination. But you can of course do almond butter, white chocolate, anything you want.

I love seeing granola in the fridge too. Love to keep big batches of this bark on hand at all times. It’s a great way to use up leftover seeds or nuts and things too. And this granola bark is a must must try. I cannot wait to hear to what you think of it.

What ingredients you need for Granola Bark:

  • Gluten-free rolled oats – I usually use this oat variety that has seeds but regular rolled oats works
  • Chia seeds – loving adding these in for nutrients!
  • Ground flaxseeds – same here. Also you can do whole flaxseeds if you prefer
  • Maple syrup – I prefer maple syrup here over honey but honey can also work. Not coconut sugar as it’s a different consistency 
  • Creamy peanut butter – the creamier the better! Not chunky. Also if you can’t eat peanuts, do almond butter, cashew butter or tahini
  • Melted coconut oil – or sub avocado oil or olive oil
  • Vanilla extract – love adding this for flavor
  • Dark chocolate chips – you can also use milk chocolate chips if you prefer
  • Flakey sea salt – flakier the better!

How to make Peanut Butter Cup Granola Bark:

  1. Preheat oven to 325 degrees F and line a baking sheet with parchment paper
  2. In a large bowl mix together oats, chia seeds, flaxseeds together
  3. Next add in maple syrup, creamy peanut butter, oil and vanilla well so everything is evenly combined
  4. Press down the granola mixture really well and make sure it is all formed together in one large pieces (I used my hands and spatula to do this)
  5. Add the granola bark to oven and cook for 25 minutes, rotating the sheet halfway through baking
  6. Allow the bark to cool completely then melt together chocolate and peanut butter and pour on top of bark and spread well
  7. Sprinkle sea salt on top if desired and add to fridge or freezer to set
  8. Cut into desired size pieces and enjoy!

FAQs and tips on making Granola Bark:

  • How long does this granola bark stay good for? In the fridge for about week then in the freezer for two months but it flies out of our fridge. It’s so addicting!! 
  • Can I use other nuts or seeds in this too? Yes. Coconut flakes 
  • What is the best way to eat this granola bark? As is, with yogurt, with fruit, anything you want.
  • I don’t love peanut butter, can I use another nut butter? Absolutely. Use tahini, almond butter, cashew butter or sunflower seed butter.
  • My granola didn’t turn into a large bark, what did I do wrong? It is essential to press down the granola mixture into a large piece on the baking sheet. Firmly press it down so it is one large piece. Also if you omit any ingredients it may not stick together well. The oil, maple syrup and peanut butter ratios help make this a large cluster that sticks together.
