This recipe is absolutely delicious and such a game-changer sandwich option. Perfect for a savory snack, quick meal and you can use it as a tortilla, flatbread or whatever you are craving.

I have seen this recipe all over the internet and I had to give it a try. It sounds so random and not like something that will actually taste good. But it really is tasty and it’s a great way to sneak in some extra protein into your diet. Plus I don’t even like cottage cheese and I think this recipe is so good. So even if you don’t love cottage cheese, you may surprise yourself with this.

This flatbread is not just easy to whip up, but it is really packed with good stuff. Cottage cheese is so versatile in how you can use it. It makes the flatbread moist but still gets crispy and the eggs make it light and fluffy. 

You only need a few ingredients to make this like cottage cheese, eggs, spices and I add some parmesan cheese for flavor. It is gluten-free, grain-free, nut-free and truly so delicious. I had it with some tuna salad on top, chicken salad the next time and then when I shot this recipe, I did turkey and some veggies with hummus.

  • Cottage cheese – can be full-fat, low-fat or fat-free, use your preferred one.
  • Eggs or liquid egg whites – either can work for this recipe!
  • Grated parmesan cheese – I like to use freshly grated parm but you can also omit if you prefer
  • Garlic clove – or any other spices you want like everything bagel seasoning, chili powder, etc.

How to make cottage cheese flatbread:

  1. Preheat oven to 350 degrees F and line a quarter baking sheet with parchment paper
  2. Blend the ingredients together until smooth
  3. Grease the parchment paper then pour the batter across
  4. Bake in oven for 35-40 minutes
  5. Allow the flatbread to cool then remove and add desired toppings

Tips and FAQs and making this cottage cheese flatbread:

  • Feel free to experiment with other flavors! Add in some everything bagel seasoning, chili powder, rosemary or anything you are craving.
  • Use any toppings you want too – add some avocado with smoke salmon or do turkey, cheese and lettuce tomato. Or whatever you love for your sandwiches! You can also do a Greek vibe with some kalamata olives, cucumbers, feta cheese and some chicken. Or make it like a pizza with tomato sauce, pesto and cheese.
  • Does this flatbread stay good after? Yup! You can make this ahead of time if you want. I do love the flavor more when it is fresh out of the oven. But I reheated it when I had leftovers and it was great. I don’t recommend freezing this recipe though.
  • What about an air fryer instead of an oven? You can air fry it! Just watch it though because when I did the top browned a bit quicker. Make sure it’s not too hot.
