Cilantro Caesar Salad Dressing made with a few simple ingredients for a delicious, creamy cilantro dressing to top on your favorite caesar salad or taco salads!
The salad dressing makes or breaks the salad guys. And I am *all* about the salad dressing. It is a key part of the salad and if you are someone who doesn’t love to eat your veggies and greens, then salad dressing is key.
It is also so incredibly easy to make your own dressing at home. A lot of store-bought dressings have tons of unnecessary ingredients or canola oils and added sugars. But when I make my own, I’m able to use extra virgin olive oil, fresh and organic ingredients and it is so easy to add it all into the blender to put together.
This cilantro caesar dressing is one of our favorites. I had so much cilantro growing in our herb garden and wanted to find some ways to best use it besides guacamole, which we make basically daily. So this cilantro caesar salad was a must try. And we became absolutely obsessed. You can make a batch and keep it in the fridge for about a week or so!
What ingredients you need to make this Caesar Dressing with cilantro:
- Garlic cloves – fresh garlic cloves to add into this are a must!
- Lemon – fresh lemon juice from about 1 lemon
- Dijon mustard – I love adding this for extra flavor to my dressings
- Greek yogurt – I use this instead of may for this version and loved it but if you prefer mayo, that’s fine too!
- Feshly grated Parmigano-Reggiano – freshly grated from the block of cheese is best
- Cilantro – fresh cilantro is best for this
How to make Cilantro Caesar Salad Dressing:
- Add ingredients to a blender and blend until smooth and creamy
- Add to a lidded jar or tupperware and store in fridge until ready to dress on top of you favorite salad
- I love adding this to a caesar salad, mexican taco salad or anything!
Best tips for success making cilantro caesar dressing:
- Put together your favorite salad with any toppings you have to use this dressing with! My favorite combo: romaine, corn, tortilla chips, guac, salsa, chicken, cojita cheese cilantro, pumpkin seeds with some chicken on top!
- This is a great dressing to make in larger batches if you love it and want to keep in fridge for a dinner party or to serve more of it than the recipe amkes
- With that being said.. you can also 1/2 this recipe too to make a smaller recipe
- You can really use greek yogurt OR mayo for the base. I like greek yogurt in this version of my caesar dressing. Kind of goes better with the mexican-inspired toppings

Ingredients
- 2 small garlic cloves, minced
- Juice from 1 lemon, squeezed
- 1 tablespoon dijon mustard
- 1 cup greek yogurt
- 1/2 cup freshly grated Parmigano-Reggiano (freshly grated from the block of cheese)
- 4 tablespoons fresh cilantro (leaves only!)
- Sea salt and black pepper to taste
Instructions
- Add ingredients to a blender and blend until smooth and creamy
