Sharing my Copycat Good Humor Toast Almond Bars! These delicious ice cream bars are gluten-free, vegan-friendly and are made with just 3 ingredients! 

I am back baby. With another delicious ice cream bar recipe you *must* try ASAP.

We are going to be making a lot of your childhood favorites into a healthier version and it isn’t stopping with these almond bars. In fact – I have a list on my phone of all the ice creams we are going to recreate.

I was shook over how many requested Toasted Almond Ice Cream Bars though so I hope you guys love these. We are obsessed over here!

I use 3 simple ingredients to make these: vanilla ice cream, raw almonds, coconut sugar and butter/oil.

While the original is made with: Nonfat Milk, Cake Crunch With Almonds (bleached Wheat Flour, Almonds, Sugar, Palm Oil, Artificial Flavor, Caramel Color, Salt, Sodium Bicarbonate, Soy Lecithin), Corn Syrup, Sugar, Water, Soybean Oil, Palm Oil, Coconut Oil, Less Than 2% Of: Whey, Mono And Diglycerides, Locust Bean Gum, Guar Gum, Natural And Artificial Flavor, Caramel Color, High Fructose Corn Syrup, Turmeric Oleoresin (for Color), Vitamin A Palmitate.

What ingredients you need to make copycat Good Humor Toasted Almond Bars:

  • Pint of vanilla ice cream – can use vegan ice cream if preferred! I used a traditional vanilla ice cream from the store
  • Raw almonds – I like to buy organic/raw and toast them myself but you could buy toasted almonds too
  • Coconut sugar – you will add this to the almonds when you toast them to sweeten the ice cream pops
  • Butter or oil – either works and you just need some to grease the pan for the almonds/sugar

How to make Toasted Almond Ice Cream Bars:

  1. Let the ice cream thaw out for a few minutes then begin scooping and pressing into each ice pop molds (I made 4) and spread across with spatula so it is smooth and insert popsicle sticks
  2. Add to freezer to set for at least 3-4 hours or overnight
  3. Next take almonds and add to food processor and pulse to break up into crumbs (be sure not to over pulse or you will get a meal) or you can also just chop with a knife
  4. Warm a large skillet with butter then add the almonds and coconut sugar and mix and toast on medium/low heat for about 5-10 minutes, mixing every minute or so
  5. Remove from heat and add to a plate or shallow bowl
  6. Remove ice pops from freezer and gently take out of mold and cover in the almond mixture and add to a baking sheet, pressing down the almonds so they stick
  7. Add back to freezer to set for at least 15 minutes and store in freezer until ready to eat!
