Ingredients
- 4 ounces Genoa salami (try not to use the small size – should be at least 4 inches)
- 1/3 cup roasted red peppers, chopped
- 1/2 cup mini mozzarella balls (cut in fourths)
- 3/4 cup marinated artichoke hearts, chopped
- 3 tablespoons fresh basil, chopped
- 1 teaspoon balsamic vinegar
- Sea salt and black pepper to taste
Instructions
- Preheat oven to 375 degrees F
- Place a slice of salami into the mini muffin tin, forming them into the well. I usually cut a little slit in the salami to help form it too
- Add to oven and bake for 10 minutes then remove from heat and allow them to cool
- As the salami bakes and cools, make the antipasto salad by combining the peppers, mozzarella, artichokes, basil, balsamic and salt and pepper
- Once the salami is cooled, stuff each with some of the salad and serve
