I got you covered with these delicious and EASY Taco Stuffed Peppers guys! The ultimate way to spice up your weeknight dinner routine without ordering takeout again or heating up a frozen pizza. Although that is 100% us over here at least 2x a week – ha!
These stuffed peppers are such a delicious dinner recipe and they make for some killer leftovers for lunch the next day. I love that they come together so easily. And I can really use ingredients I typically have on hand to make it. There is always some sort of ground meat in our freezer. And for these you can use beef, turkey, chicken, anything works for them. I have made these using all 3 and they turned out perfect each time.
Plus you can switch things up with any jarred salsa you have and beans. I usually use black beans here as you’ll see below. And some chunky milk salsa. But I bet a salsa verde would be so good as well mixed in to the meat.

What ingredients you need to make gluten-free Taco Stuffed Peppers:
- Avocado oil
- Ground turkey, beef or chicken
- Jar of chunky salsa
- Spices
- Bell peppers, sliced in half length wise and scoop out the seeds
- Black beans, washed and rinsed
- Shredded pepper jack cheese (or sub any other cheese you want)
- Cotija cheese (or sub any other cheese you want)
- Cilantro for garnish
- Chips and avocado for serving
How to make healthy stuffed peppers:
- Warm a large skillet over medium heat and add ground meat
- Cook over medium heat for 5-7 minutes and break into pieces with wooden spoon or spatula
- Add in the salsa and cook from other 2 minutes or so until meat is fully cooked
- Strain any excess oils if desired from the skillet once the meat is cooked then add in the black beans and mix well
- Preheat oven for 425 degrees and scoop the meat mixture into each bell pepper (depending on the size of the pepper, you may have leftover meat)
- Sprinkle cheese on top and bake in oven for about 10-15 minutes or until cheese is melted
- Serve while warm!

Ingredients
- 1 tablespoon avocado oil
- 1 lb ground turkey, beef or chicken
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Sea salt and black pepper to taste
- 12 ounce jar of chunky salsa
- 4 bell peppers, sliced in half length wise and scoop out the seeds
- 1/2 cup black beans, washed and rinsed
- 1/2 cup shredded pepper jack cheese (or sub any other cheese you want)
- 1/3 cup cotija cheese (or sub any other cheese you want)
- Cilantro for garnish

Notes
*Store leftovers in fridge for 5 days. I like to warm these in the oven before eating if possible. Or you can use microwave too or a skillet.
