- 1 cup graham cracker crumbs (gluten-free if needed), I use food processor to crush them up
- 1 cup coconut sugar
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup dark chocolate, melted
Instructions
- In a large bowl, stir together the crushed up pecans, crushed up graham crackers, coconut sugar, maple syrup and vanilla extract and mix to combine
- Line a baking sheet with parchment paper
- Form mixture into 2-inch balls (about 2 tablespoons per ball) then place onto the baking sheet
- Add to freezer for 1 hour to set
- Then dip each ball into chocolate then place onto the baking sheet again
- Let the truffles set for about 30 minutes in freezer or until firm and enjoy!
