This is one of the most delicious and easy breakfast recipes to make. It’s like frittata but a sheet pan version. Rich, creamy, fluffy eggs filled with caramelized onions, gruyere cheese and when I tell you this is easy to make – this is EASY to make guys. 

This breakfast is a healthy and protein-packed dish to try. And it’s great for a brunch or breakfast with your family or friends. But it’s also a great dish to meal prep too. It’s one I love to have on hand in the fridge and I give it to my little ones for quick and easy meal. Sometimes for breakfast, sometimes for lunch or even dinner.

This sheet pan egg recipe is packed with flavor, has no crust making it gluten-free and lighter than a quiche. It’s kind of like a big quiche if you think about it. Plus it’s super simple, doesn’t actually require much effort to make and it’s great to serve with some toast, veggies, or whatever you’d like.

If you do have some leftovers in this when you make it, you can freeze them too. It stays in the freezer for about 2 months. Just defrost in fridge overnight or microwave.

What ingredients you need to make French Onion sheet pan eggs:

  • Olive oil – or use avocado oil if you prefer
  • Yellow or white onions – you’ll want to thinly slice these. You need about 2 cups raw onions so depending on the size of the onion you made need 3
  • Dried thyme – you can also chopped up fresh thyme as well
  • Garlic cloves – freshly minced garlic gloves for this dish
  • Chicken, veggie or beef broth – really any broth works. I have used all 3 of these and they are all great
  • Dry white wine – if you don’t have wine, omit but the alcohol also burns off from cooking
  • Large eggs – I don’t have a sub for eggs as they’re a key part of the recipe!
  • Milk – or use heavy cream for an even richier recipe
  • Gruyere cheese – I don’t have a sub for this cheese as gruyere cheese is great for flavor and creaminess in this recipe

How to make French Onion sheet pan eggs:

  1. In a medium skillet, add oil and warm over medium heat
  2. Add onions, dried thyme, garlic and salt and pepper to stir to combine
  3. Cook for a few minutes or until onions start to soften
  4. Reduce heat to low and cook, stirring occasionally for about 45 minutes or until the onions are deeply golden and caramelized
  5. Preheat oven to 400 degrees F
  6. Add the broth and wine to skillet and cook until evaporated
  7. In a large bowl, whisk together the eggs, milk and season with salt and pepper
  8. Great a quarter sheet pan with oil
  9. Sprinkle half the cheese and all of the onions across the sheet pan
  10. Pour the egg mixture on top then sprinkle the rest of the cheese
  11. Bake in oven for 18-20 minutes or until eggs are puffed and set and top of eggs are golden
  12. Cool for a few minutes then slice and enjoy (the fluffiness will go down!)

  • What are some other variations for this recipe? Add some baby kale or spinach for veggies. You can also add in some mushrooms, goat cheese, anything else that you may be craving.
  • Can I make this in a skillet? Yes of course. Cook the eggs in a large 10 or 12 inch oven-safe skillet if you want instead and do a more classic quiche recipe.
  • Can I prep this ahead of time? You can! I recommend baking it and then reheating it before serving. Or just prep the onions before then assemble and bake. The only time consuming part is waiting for the onions to cook!
  • Is this recipe good for kids? My infant loves this recipe. He is obsessed with eggs so as long as your kids can safely eat eggs, it’s a great option. 
  • How do you serve this? I like to toast a baguette or toast to go with it for a carb. But you can also serve with a side salad or extra veggies or something as well.
