These Morning Glory Bars are a nutritious and healthy breakfast recipe to make. These bars are gluten-free and dairy-free and they’re low in sugar. My kids are obsessed and I love how I sneak in some veggies too!

I am team sweet breakfast for life. There isn’t a day that goes by that I don’t eat something sweet over savory for breakfast. I’m not a fan of eggs for breakfast. For lunch or dinner – 100%. But breakfast I always want something more on the sweet side.

These morning glory bars are one of my favorites right now. They are gluten-free, dairy-free and SO good for kids too! I love how they have no sugar besides bananas in them. And these bars sneak in some veggies too. I add in zucchini and carrots, which don’t add any flavor to the bars. Just some extra nutrients for us.

You now who really loves these bars? My 1 year old! Cooper devours these morning bars any time of the day. They’re super nutritious, which I love. And these are great for all ages. I like to add mine to my bowl with some coconut yogurt, berries and a drizzle of peanut butter on top. Or you can eat these on the go in the car or scarf it down your throat as you get your kids ready for school.

I also like to keep a batch of these in the freezer because they freeze really well. You can either defrost them overnight or just pop one in the microwave for 30 seconds or until they are defrosted and ready to eat.

What ingredients you need to make these healthy morning glory bars:

  • Creamy nut butter – you can use any creamy nut or seed butter. I like to use peanut butter since it’s my favorite for flavor! (and my favorite food lol!)
  • Banana – the more ripe the banana the sweeter it will be
  • Vanilla extract – splash for flavor!
  • Egg – you can use an egg replacement if you want
  • Ground flaxseeds – you can use ground chia seeds too
  • Gluten-free rolled oats – regular gluten oats can work too
  • Cinnamon – I love adding this for flavor too
  • Shredded zucchini – make sure to squeeze the moisture out so it’s not too wet
  • Shredded carrots – I like to add carrots to a food processor to grate it a bit easier.

How to make morning glory bars:

  1. Preheat oven to 350 degrees and line and grease an 8×8 baking dish
  2. In a large mixing bowl mix together nut butter, banana, vanilla extract and egg until combined
  3. Mix in oats, flaxseeds and cinnamon until combined
  4. Fold in zucchini (squeeze out water), carrots and raisins
  5. Add batter to baking dish and bake in oven for 20-22 minutes or until top is golden and feels firm
  6. Allow the bars to cool for a few then slice and enjoy

FAQs and tips on making these breakfast bars:

  • Can I freeze these? Yup! I always freeze half my batch. They stay in the freezer for 2 months. You can defrost overnight in fridge or pop one into microwave for 30 seconds or until ready.
  • Can I add any other mix-in’s? Yup! Some chopped walnuts or chocolate chips are great in these. Same with blueberries or coconut shreds. You can customize these to fit your taste buds.
  • What kind of nut butter do you use? Creamy peanut butter is my go-to. But almond butter, cashew butter or even tahini or sunflower seed butter can work too.
  • My batter is super thick, is that okay? Yup! It will be thick, not thin! Kind of sticky too from the nut butter.

  • 1 cup creamy nut butter
  • 1 ripe banana, mashed
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 2 tablespoons ground flaxseeds
  • 1 cup gluten-free rolled oats
  • 1 teaspoon cinnamon
  • 1/2 cup shredded zucchini (squeeze out moisture!)
  • 1/2 cup shredded carrots
  • 1/2 cup raisins
  • Optional: for sweeter bars, add 1/3 cup maple syrup!
