BUFFALO MAC AND CHEESE BABY!!!
Clearly we have something going on with buffalo everything over here lately. Jord and Ez love it and it really just takes every single recipe to the next level you know? Especially things like this buffalo mac and cheese. It is one of those easy dishes you can make for a quick and easy comfort meal. And you can add in any chicken or anything you want too, to make it a more filling meal.
This dish is such a creamy and wholesome and flipping delicious recipe to make. It is one of those crowd pleasing recipes that satisfies anyone and everyone. And I love using full-fat coconut milk in it for extra creaminess. It is such an underrated milk to use in recipes like this. Kind of like a buttermilk creaminess if you will!

What ingredients you need to make healthier buffalo macaroni and cheese:
- 3 tablespoons pasture-raised butter
- 2 cups full-fat coconut milk or any non-dairy milk
- 5 cups organic shredded cheddar
- 1/3 cup mild buffalo sauce (or more if you want!)
- 3 tablespoons gluten-free oat flour (whole wheat flour or spelt works too)
- 1 lbs gluten-free pasta of choice
How to cook gluten-free buffalo mac and cheese:
- Prepare pasta per package
- As pasta cooks start making the “sauce” by adding the butter, milk, cheddar and buffalo sauce to medium sauce pan and melt over medium/high heat and stir consistently
- Once melted add in the flour and mix well so no clumps and the cheese is creamy
- Mix in the pasta and serve while warm!

*Store leftovers in fridge for 5 days. Reheat over stovetop or in microwave (I add a splash of milk or water if it is a bit firm)
