Healthy Caramelized Banana Bread Blondies are paleo, gluten-free and they are made using my favorite Simple Mills Banana Bread Mix.
Every time I open my pantry these days, I am finding more and more items I want to try to use up. Even without the quarantine, I am usually a “use what we have” kind of person in the kitchen. With the exception of produce and things, I try to always eat what we have before buying more.
I was beyond excited when I found my absolute favorite banana bread mix in there. Sitting on the shelf ready to be baked and then devoured over here.
At first I was going to make some muffins or a loaf out of it, but I saw a few freckled bananas on my counter too. And I know we could get a little fancier than that today.
These Caramelized Bananas Bread Blondies are a family favorite! A healthier recipe that can be enjoyed as a breakfast, snack or dessert!
I love having these with some coconut yogurt and nut butter on top for a little breakfast action. Or you can snack on them pretty much any time of the day. Is anyone else finding themselves having desserts after every single meal these days? Or just me? Anyways, these blondies have been my post-lunch sweet something and they are so satisfying!
What ingredients you need to bake these banana blondies:
- Bananas – you don’t have to add in extra bananas and caramelize them but omg I highly recommend it!
- Flax eggs or eggs – either should work here. I made using flax eggs but with the Simple Mill’s mix, you can usually sub 1:1 for eggs
- Creamy tahini – or any nut butter works. I wanted to use something that wasn’t too overpowering
- Avocado or coconut oil – either works as long as it is in liquid form
- Simple Mills Banana Bread + Muffin Mix – the main star of the show! I don’t have a sub recommend if you don’t have this but I highly recommend ordering some. It is the best!! Healthy Caramelized Banana Bread Blondies (vegan + gluten-free)
Healthy Caramelized Banana Bread Blondies are paleo, gluten-free and they are made using my favorite Simple Mills Banana Bread Mix.

Yield: 9 blondies 1x
Ingredients
Caramelized Bananas:
- 1 tablespoon avocado or coconut oil
- 2 large bananas
- Cinnamon to taste
Banana bread blondes:
- 2 flax eggs (1 tablespoon ground flax + 2.5 tablespoons water per egg)*
- 3 tablespoons avocado oil or liquid coconut oil
- 1/2 cup filtered water
- 1/3 cup creamy tahini (or creamy nut butter)
- 1 box of Simple Mills Banana Bread + Muffin Mix**
- Optional mix-in’s: walnuts, chocolate chips
Instructions
- Preheat oven to 350 degrees and line an 8×8 baking dish with parchment paper or grease well
- Begin making the caramelized bananas by warming oil over medium heat and make sure the skillet is coated
- Slice the bananas into skillet and sprinkle some cinnamon on top
- Cook over medium heat for a couple minutes then turn over and cook for another minute
- Remove bananas from heat or remove skillet from stove and begin making the blondies
- In a large bowl, whisk together the flax eggs, tahini, oil and water until smooth
- Mix in the banana bread mix until creamy and well combined
- Fold in the caramelized bananas and feel free to add in any mix-in’s here too
- Add batter to dish and bake for about 25 minutes, or until you stick a toothpick in and it comes out clean
- Allow the blondies to cool for a bit then slice and enjoy! Store leftovers in airtight container for 5 days or freezer for 2 months

*Sub 2 eggs instead of flax eggs if desired
