How to Grill Vegetables in a few simple and easy steps all season long like peppers, onions, zucchini and sweet potato fries!
Grilled veggies remind me so much of summer and BBQs at my parent’s house/the home I grew up in.
We always had grilled veggies at every barbecue and it is one of the only ways to get me to actually eat a vegetable at times (oops). I love the texture and flavor the grill gives them and how delicious they turn out. Plus they are so easy to make and are always a great addition to any summer BBQ or get together. Of course the hot dogs, burgers and potato salad are key. But the grilled veggies are always a crowd favorite and it helps everyone it a little healthier!

What veggies we are grilling:
- Bell peppers, cut into 1/2 inch thick strips
- Sweet onion, peeled and cut into 1/2 inch rounds
- Zucchini, cut into 1/2 inch thick strips
- Sweet potatoes, cut into fry form
- Extra virgin olive oil
- Sea salt and black pepper and any other spices you’d like
- Grill basket if you’d like (I use this for smaller cut veggies)
How to grill vegetables on the grill in a few easy steps:
- Begin by soaking the sweet potatoes in fry form in bowl of cold water for 30 minutes
- Next strain then add each vegetable to their own bowl or one large bowl and drizzle olive oil on top and add spices and toss well
- You want to add more oil than you think and it burns off on grill and same with salt on watery veggies like zucchini so it soaks up the water/moisture
- Preheat grill to medium heat and add veggies to grill or onto grill basket and cook the onions, peppers and sweet potatoes for about 8-10 minutes then flip and cook for another 8-10 minutes
- For the zucchini cook 4-5 minutes then flip and cook for another 4-5 minutes so that get a little blackened and crisped
- Remove from grill and enjoy!

- What vegetables are good for grilling? Peppers, onions, corn, portobello mushrooms, zucchini, eggplant, asparagus and cauliflower are some of our favorites!
- Do you have to marinate veggies before grilling? I just like to oil them and season well. I don’t go crazy with marinades with my veggies like I do with chicken or meats.
- Do you use a grill basket when you grill vegetables? It is up to you. I like to for when the veggies are cut into smaller pieces so they don’t fall through the grill.
