Excuse the crazy all caps but that is how excited I am to be sharing this recipe with you guys. It was devoured by Jordan and I and the couple lucky friends I shared it with in literally one day. I have a feeling I will be making this often for us to enjoy. Plus you guys know how much we love pancakes and crumb cake in our house – so this recipe is magical.

What ingredients you need to make this Blueberry Crumb Cake Pancake Skillet:
Pancake skillet:
- Krusteaz Buttermilk Pancake Mix
- Water
- Egs
- Blueberries
- Coconut oil, melted and cooled)
- Coconut sugar
- Cinnamon
How to whip up this easy and delicious blueberry pancake skillet:
- Preheat oven to 350 degrees and grease a 12-inch cast iron skillet (or 9×9 baking dish or round baking dish with oil/butter)
- Begin making the pancake skillet by mixing together pancake mix, water and eggs until smooth then fold in blueberries
- Add to greased skillet then begin making the crumb topping
- Mix together crumb topping ingredients to form the “crumbs”
- Sprinkle on top of skillet and bake in oven for 25 minutes or until just perfectly golden brown!
- Serve with desired toppings like maple syrup, yogurt, fresh fruit and enjoy!
