You can 10000% thank my husband for this recipe guys. He is the reason I love chicken thighs. I would have never thought to make chicken thighs with bone-in and skin-on before him. And once you try them, you’ll never want to have boneless/skinless chicken thighs again.

I love making this recipe to have for dinners or lunches. You can enjoy the chicken as is with the veggies or add it to salads, pastas or with your favorite sides.

The flavor is absolutely insane in this chicken. The lemon, garlic and parmesan cheese is such a killer combo. I love how the cheese adds a crisp and crunch on top of the chicken too when it bakes.

My 4 year old was sitting at his plate eating this chicken straight from the bone. It just falls off and it’s because you cook it low and slow. Usually chicken is roasted at a higher temp but I love doing this at 350 degrees so it cooks longer and the flavors really marinate together.

What ingredients you need to make Lemon Garlic Parmesan Chicken Thighs:

  • Bone-in skin-on chicken thighs – I haven’t tried with chicken breasts or skinless/boneless chicken. I do think it would be delicious but the cook time will vary. Start with 30 minutes and track from there.
  • Greek yogurt – if you don’t have yogurt or don’t like it, you can use mayonnaise too
  • Freshly grated parmesan reggiano – I love grating fresh parmesan for this. Adds so much flavor and a great crisp on top!
  • Garlic – freshly minced garlic or you can use a garlic paste to powder
  • Smoked paprika – love adding this for flavor to the chicken 
  • Lemon – freshly squeezed lemon is great to add here
  • Extra virgin olive oil – great addition for crisp and for the veggies

How to make crispy oven chicken thighs:

  1. Preheat oven to 350 degrees and grease a large baking dish
  2. Pat the chicken dry and add to baking dish
  3. Season with seasoning blend and add the yogurt, garlic and cheese
  4. Using your hands (wear meat handling gloves) and really rub the marinade into the chicken
  5. Add any veggies if roasting, generously drizzle olive oil on top of the veggies then bake for about 1 hour in the oven until the chicken reaches 165 degrees F
  6. Enjoy while warm with any other desired sides

FAQs and tips on making crispy lemon parmesan chicken thighs:

  1. Can I use boneless chicken thighs for this recipe? Absolutely. I personally haven’t try it as I find bone-in and skin-on more flavorful. Adjust the cooking time as needed as well as they cook faster without the bone or skin.
  2. Can I use chicken breasts? Yes you can! But same as above – it wouldn’t be as flavorful in my opinion. But surely delicious (nothing beats skin-on bone-in chicken thighs!) and make sure to adjust the bake time.
  3. What veggies should I add to this dish to roast? I love doing carrots, onion, potatoes, or broccoli. Either a dutch potato or sweet potato can work too.
  4. What is the best way to reheat this dish? In microwave or skillet. Grease the skillet well and reheat low and slow.

  • 1/3 cup greek yogurt
  • 1/2 cup freshly grated parmesan reggiano
  • 1 teaspoon garlic, minced
  • 1 teaspoon smoked paprika
  • Sea salt and black pepper to taste
  • Juice of 1/2 lemon
  • Extra virgin olive oil
  • Extra veggies to roast with it: carrots, sliced potatoes, onions, broccoli, etc.
