This Greek Chicken Skillet is an easy, one-skillet meal that is made with chicken breasts or thighs, rice, olives and feta for an easy weeknight dinner recipe.

It is one that feeds my entire family (to the point where there are no leftovers!). And I love that it’s a one-skillet kind of meal.

This dish is very flavorful and you will make an easy seasoning blend for the chicken. The best part about this dish though is the olives and feta cheese added at the end. Such an underrated flavor combo and the feta cheese gets melted and warmed and it melts right into the rice and chicken.

I love to make this for dinner and I love that you can easily double or triple the recipe if you are making this for more than a few people.

What ingredients are in this one-skillet Greek chicken with rice:

  • Chicken thighs or breast – I used bone-in and skin-on as I prefer this for flavor!
  • Olive oil – or use avocado oil if you prefer
  • Garlic powder 
  • Dried oregano 
  • Lemon
  • Shallot – peeled and sliced! If you prefer onion you can use that instead or shallot
  • Garlic clove 
  • Basmati rice – I love using basmati rice but you can use brown rice too
  • Broth – chicken or veggie broth both work
  • Pitted kalamata olives and castelvetrano olives – I love mixing these two olives here
  • Feta cheese crumble

How to make Greek chicken with rice in one skillet:

  1. Preheat oven to 375 degrees F
  2. Grease a oven-safe skillet with oil and warm on medium heat
  3. Add chicken to skillet and season with salt, pepper, oregano and garlic powder
  4. Sear fora bout 7-9 minutes, flipping halfway through over medium heat
  5. Remove chicken from skillet then add in shallots and garlic and sauté for 5 minutes
  6. Stir in rice and add in broth and bring to a boil, stir then simmer
  7. Add in the chicken to the skillet then cook in oven for 20 minutes or until liquid is absorbed
  8. Remove skillet from oven and add in olives and feta cheese, drizzle olive oil on top then broil in oven for 1-2 minutes then remove from oven and enjoy warm!

  • Can you make this Greek chicken dish in advance and reheat it? Absolutely! It is a great option to meal prep for the week. It stays well in the fridge for up to 5 days and you can reheat it in the microwave or stovetop.
  • I don’t love olives, what else can I use? Tomatoes or roasted peppers wold be great! or you can omit in general and it won’t impact the recipe itself.
  • Can I make this recipe with chicken breasts or thighs? Either work! Thighs cook quicker so the time may be different. But I also use bone-in and skin-on for both for flavor! But you can also use boneless/skinless if you prefer.
  • Is this dish good for kids? My kids LOVE this recipe. Not sure what it is about my kids and olives and cheese but they love it. This is a great family meal to prep!

  • 1 lb chicken thighs or breast (I used bone-in and skin-on as I prefer this for flavor!)

  • 1/2 teaspoon garlic pwoder
  • 1/2 teaspoon dried oregano
  • Juice from 1/2 lemon

  • 1 cup basmati rice
  • 2 1/2 cup broth (chicken or veggie)
  • 1 cup pitted kalamata olives and castelvetrano olives (or your favorite olives)
  • 2/3 cup feta cheese crumbles
