Ingredients
- 3 small/medium sweet potatoes or 2 large sweet potatoes
- 1 tablespoon olive oil
- sea salt and black pepper
- 1/2 small white onion, chopped
- 1 lb ground beef
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup chopped pickles
- Optional: special sauce and sesame seeds for garnish
Instructions
- Preheat oven to 425 degrees and line a large baking sheet with parchment paper
- Slice the sweet potatoes into thin rounds (about 1/4 inch – I use a mandoline)
- Add to baking sheet in a single layer and drizzle oil on top and season with salt and pepper
- Add to oven to cook for 15 minutes then flip and cook another 10 minutes (add more oil if needed). Depending on how thin your sweet potatoes are, you may need longer cook time
- Meanwhile when the sweet potatoes cook, warm a large skillet with oil and cook the onion for about 4-5 minutes so it gets golden and fragrant
- Then add the meat and break it down to smaller pieces (I use a meat masher)
- Season with garlic and paprika and salt and pepper
- Cook for about 8 minutes, continuing to break up the meat and cook on all sides until browned
- Remove from heat and add on top of the cooked sweet potatoes followed by cheese
- Add back to oven and low broil the “nachos” for about 30 seconds to 1 minute or until cheese is melted
- Remove from oven and add with other toppings, layering as you would nachos
- Serve while warm!

*Store leftovers in fridge for a day or so. Reheat in oven, skillet or microwave. Keep in mind the toppings may be a bit soggy!
