This is how we ensure the chicken gets crispy but not dry and also is super flavorful. Then cooking bone-in and skin-on also helps a lot with this.

The basics you need to make chicken thighs:
- Chicken thighs – obviously ha! We like to use ones bone-in and skin on always. It keeps things extra flavorful and tasty if you leave it on. I also think it stays moist that way.
- Olive oil – or you can use avocado oil if you prefer
- Spice blend of: oregano, basil, onion powder, garlic powder, salt and pepper
- Fresh lemon to squeeze on top
How to cook chicken thighs no on the grill and in the stovetop and oven instead:
- Heat cast iron skillet on medium/high heat and preheat to 400 degrees
- Add chicken to a bowl and drizzle olive oil on top
- Mix together the spices and lemon juice in a bowl then pour on top of the chicken to evenly coat
- Place chicken skin side down on skillet to cook 1-2 minutes
- Flip and cook on the other side for 1-2 minutes
- Transfer to oven and cook for 30 minutes or until ready
- Enjoy while warm! I especially love snacking on the skin too

- How do you get the skin of the chicken extra crispy? By cooking it over the stovetop first before baking! Helps char it a bit, but I don’t like fully cooking the chicken on the stove top because it can dry out a bit.
- Are chicken thighs healthier than chicken breasts? They are both healthy and good for you in their own way. Chicken thighs have a bit more healthy fats and they’re much more flavor, have a ton of nutrients and vitamins. Chicken breasts are lower in fat and have less flavor but still can be delicious if prepared correctly.
- Can I use chicken breasts instead of chicken thighs? Absolutely! Cook time may differ depending on size of chicken breasts.

- 1 lb chicken thighs (we like bone-in skin on!)
- Olive oil
