These cookies were super last minute.

We were headed to one of our friend’s apartments for a BBQ and I wanted to bring a dessert over. It is pretty rare for someone in Hoboken to have a backyard/deck area so you could imagine how excited we were to go!

I had some graham crackers and marshmallows leftover that I didn’t want to go bad. And at first was going to make my 6-ingredient Dark Chocolate S’mores Bars (gluten-free + nut-free) but I wanted to switch things up a bit.

Instead I baked these insanely good Chocolate S’mores COOKIES! The best of both worlds in my opinion. They melt in your mouth and the crunch from graham crackers and chocolate chips is the best.

These healthier S’mores Cookies are made with only 6 key ingredients and they are ready in less than 15 minutes.

You won’t need any flour to make these either. Only a few simple ingredients to bake them, which is another reason why I love them so much. They are easy peasy to make!

What you need to make these s’mores cookies:

  • Creamy peanut butter or any nut butter
  • Egg – I haven’t tested flax egg yet
  • Coconut sugar
  • Graham crackers – you can use store bought or I have a grain-free version in my cookbook 
  • Marshmallows – again you can use store bought or I have a recipe in my cookbook!
  • Dark chocolate – code RACHL for free shipping!

Ingredients

Scale
  • 1 egg (I haven’t tested flax)
  • 1 cup creamy nut or seed butter (I love using peanut butter)
  • 1 cup coconut sugar
  • 1/2 cup crushed graham crackers (I used mine from JTGS)
  • 1/2 cup cut up marshmallows (I used mine from JTGS)
  • 1/3 cup dark chocolate chips (code RACHL for free shipping)

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper
  2. Whisk together the egg, nut butter and coconut sugar until smooth
  3. Fold in the crushed graham crackers, marshmallows and chocolate chips
  4. Scoop about 2 small spoonfuls of dough into your hand and roll into a ball and gently press down slightly onto the tray and repeat for remaining dough
  5. Bake in oven for 10-12 minutes
  6. Allow the cookies to cool for a few then enjoy!

*Store in airtight container for 5 days or freezer for 2 months
