The Best Healthy Apple Bread Ever! Made with all vegan and gluten-free ingredients, this is the ultimate apple cake sweetened with cinnamon coconut sugar.
Why is apple cake the best thing in the world?! This is one of those recipes I can eat all year around – not just in the fall! Apples are my favorite fruit forever and always. And they make for the best addition in this cinnamon coconut sugar bread.
I love that this recipe is vegan, gluten-free and nut-free. And some how it doesn’t taste like cardboard! Crazy.. I know. It is the ultimate healthier apple bread to make when you are craving a sweeter bread for breakfast, snack or dessert. I love having it warm with some vanilla ice cream on top and some caramel sauce too – INSANE.
This recipe can also be made in traditional cake form if you prefer too. You guys know I love all things in loaf form though so I always lean towards baking it in a bread dish.
Plus you can also freeze this cake for holidays or if you want to just save half for later. It is one of those recipes you will keep wanting to come back to and bake over and over again. I cannot even tell you how many times we have made it since I first tested it. It is truly one of our favorites ever.

What ingredients you need to bake healthy apple bread:
- Coconut sugar
- Coconut oil
- Flax egg
- Non-dairy milk
- Vanilla extract
- Gluten-free oat flour (or sub gf all purpose)
- Cinnamon
- Apple
How to bake vegan and gluten-free apple bread:
- Preheat oven to 350 degrees and grease a bread dish with oil and/or line with parchment paper
- In a large bowl, mix together coconut sugar, oil, egg, milk and vanilla until smooth
- Mix in oat flour, baking powder and cinnamon until fully combined
- Fold in apples then add to bread dish – I also sprinkle some extra coconut sugar and cinnamon top here for sweetness
- Bake in oven for 40-50 minutes, or until finished. I stick a toothpick in to see if it is ready!
- Allow the bread to cool for a few then slice and enjoy!

Ingredients
- 1.5 cups coconut sugar
- 1 flax egg (or egg)
- 1/3 cup liquid coconut oil
- 1 cup non-dairy milk
- 1 teaspoon vanilla extract
- 2.5 cups gluten-free oat flour (or sub gf all purpose)
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 apple, chopped
Instructions
- Preheat oven to 350 degrees and grease a bread dish with oil and/or line with parchment paper

*Store in airtight container for 5 days or freezer for 2 months

I wanted to try this but was also craving the cinnamon roll banana bread so I made this recipe minus 1/2 cup of sugar and made the cinnamon roll part of the cinnamon roll banana bread recipe. I put half the apple bread batter in the pan, topped with half the cinnamon roll mixture, repeated and swirled together. Omg it was incredible!! I know it drives bloggers crazy when modifications are made, but I couldn’t resist popping in to give this 5 stars as it would be delicious as written as well!

I used ground chia instead of flax, only 1/2 cup coconut sugar, apple pie spice instead of cinnamon, and for the flour I used a gluten free mix containing millet and sorghum for 2 cups, and buckwheat for 1/2 cup. It’s delicious, thank you!

Really quick, easy and delicious! I reduced the sugar quantity to 1 cup and it was just fine and I subbed 1/2 cup of oat flour with the same quantity of almond pulp (since I had leftovers from making the milk). It probably turned out a bit moister than if I had followed the recipe but everyone in the family loved it!
