I swear this is one of those recipes that no one will know is healthier than the usual cobbler. In fact, don’t even tell people it is gluten-free and vegan unless you know it excitements them ha! This cobbler is seriously a game changer and is the ultimate recipe to make when you have a bunch of ripe peaches and want something desserty.

What ingredients you need to make healthy peach cobbler:
- Medium ripe peaches, sliced and pitted
- Melted coconut oil (or melted vegan or reg butter)
- Coconut sugar
- Gluten-free oat flour
- Finely chopped nuts (walnuts or pecans are best)
- Cinnamon
- Melted coconut oil (or use vegan or reg butter)
- Nnon-dairy milk
- Vanilla extract
How to make this vegan and gluten-free peach cobbler:
- Preheat the oven to 400 degrees
- In a 10-12 inch baking skillet, toss the peaches, oil and sugar together and mix well
- Bake in oven for 15-18 minutes
- While the peaches bake, make the cobbler ingredients by mixing together flour, sugar, nuts, baking powder and cinnamon then add in oil, milk and vanilla until dough is formed
- Spread the cobbler dough across the skillet and bake for 20-22 minutes or until golden
- Serve with your favorite ice cream and enjoy!

Ingredients
Peach base:
- 6 medium ripe peaches, sliced and pitted
- 2 tablespoons melted coconut oil (or melted vegan or reg butter)
- 1/2 cup coconut sugar
Cobbler topping:
- 1 cup gluten-free oat flour
- 1/2 cup coconut sugar
- 1/3 cup finely chopped nuts (walnuts or pecans are best)
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 6 tablespoons melted coconut oil (or use vegan or reg butter)
- 1/2 cup non-dairy milk
- 1 teaspoon vanilla extract
Instructions

Delicious! I only did 1/4 c coconut sugar mixed in with the peaches which ended up being plenty. I LOVE the doughy topping. I plan to make this a few more times this summer!

The flavors were good, but I think I overcooked my peaches. They were too soft for my taste and it was pretty runny. I also would have liked a crunchier topping rather than the doughy one, but that’s personal preference. I’ll try the berry cobbler with the full oats next time 🙂

I didn’t have the ability to make oat flour so I used 1/2 cup gf flour and 1/2 cup oats which gave a really nice crumble. You know it’s a winner when you eat a full bowl and then stand at the pan going all in with a spoon.
