How many are guilty of spending way too much $$ on eating out or grabbing food “on the go”?! Sure there is a time and place for that but to do it every day really can add up.
If you love the Starbucks egg bites you have got to try these homemade egg bites instead. They are cheaper to make at home, absolutely delicious and incredibly easy to prep.
They get so fluffy and the blended cottage cheese or ricotta cheese is a must for this recipe. It makes them really rich and fluffy and flavorful too. I use either, it doesn’t matter cottage cheese versus ricotta cheese, so use whichever you prefer.
Plus you can add in other ingredients to spice things up. Think of this recipe is a the basic version and you can enhance them however you want!
The steaming of the egg bites in the oven is key to get them extra fluffy. You basically create a steam bath in your oven to make them. At least someone here is getting a hot bath (ha!).
What ingredients are in these copycat Starbucks Egg Bites:
- Large eggs – no subs here! Eggs are the main star of the show
- Ricotta cheese or cottage cheese – either creamy cheese can work well here, you pick!
- Sea salt and black pepper to taste
How to make 2-ingredient Egg Bites:
- Preheat oven to 350 degrees F and spray a 12 slot silicone muffin tray with oil
- Add the eggs, cheese and salt and pepper to blender and blend until smooth
- Pour the eggs mixture into the muffin pan (fill each about 3/4 up)
- Carefully prepare the steam bath by placing a baking sheet on bottom rack of oven and pour water onto the baking sheet (fill about halfway) then place the muffin tin on top of the tray or on the rack above the muffin tray (either way works)
- Close the oven and bake for 25 minutes then remove muffin tin from oven and allow the egg bites to cool before removing from the muffin tin and enjoy!
