These Cheeseburger Quesadillas are one of my go-to weeknight dinners. Perfect for anyone who loves cheeseburgers and quesadillas and is looking for an easy meal to make. Plus this recipe is gluten-free and great for kids too.
My son’s favorite foods are: quesadillas and cheeseburgers. Literally anytime we go out for dinner or I ask him what he’d like me to make, it is either a “cheeseburger” or “quesadilla”. He is such a good eater and really will consume 9 out of 10 things I make for him. So when he does request what he wants, I like to try to honor it.
Which also means that I am always trying to find new ways to make cheeseburgers and quesadillas. And that is what brings me to my latest obsession – the Cheeseburger Quesadillas!!!
These remind me of what I used to get at Applebee’s in high school. I was obsessed with their Cheeseburger Quesadilla. The crunchiness of the tortilla with the melted cheese and juiciness of a burger is unreal. Plus you can add any toppings you want like avocado, lettuce, tomatoes and of course the beloved special sauce.
You will see below that this recipe makes 4 burger quesadillas. But you can also double this to make more if you are feeding more than 4 people.

What ingredients you need to make Cheeseburger Quesadillas:
- Ground beef – if you want to use another ground meat you can like turkey or chicken
- Flour tortillas – I used almond flour ones
- Shredded cheese – cheddar, American, your favorite!
- Topping ideas: dill pickle chips, lettuce, tomatoes, bacon, anything you’d like
- Mayonnaise – mixed with the ketchup to get that orangey color special sauce has
- Ketchup – the mix of this with the mayonnaise is so key
- Sweet relish – this is the not so secret but secret ingredient to add to the sauce, so good!!
- Mustard – yellow or dijon mustard is needed for flavor here
How to make Cheeseburger Quesadillas:
- Whisk together the special sauce ingredients in bowl and set aside
- Next lay out each tortilla and sprinkle cheese on top of each
- Then season beef with salt and pepper and form into 4 patties (about the size of the tortilla if possible)
- Preheat large skillet over medium heat and add a little oil
- Add patties to skillet and cook burgers on each side until burgers reach desired temperature (as burgers cook – prepare toppings)
- Drain burger juice out of skillet then add the almond flour tortillas (I did 2 at a time since that is all that fit)
- Cook over medium-high heat until tortillas are crisp and cheese is melted
- Remove tortillas from heat then add burger on top of one then add desired toppings, special sauce and the other cheesy tortilla
- Repeat with remaining ingredients and enjoy warm!

- How many doe this recipe serve? This makes 4 quesadilla burgers that are 1/4-pound, burger stuffed quesadillas.
- What is the best way to store these? Leftovers in the fridge for up to 3 days. I do think these taste best the day of.
- What about the special sauce? These stay fresh in the fridge for a week! It is so good to add to burgers whenever.
- Can I use another ground meat? Yup! Chicken or turkey can work too. I would season it a bit more though than salt and pepper though.
- What toppings work best for theses? Avocado, lettuce, tomatoes, banana peppers, anything you’d like!

Tasted great, my husband loved it as well! And next time I know to flatten the beef a little further when I cook them to fill out the almond flour tortilla more.
