This Vegan Banana Pudding is SO good! It is made with just 5 ingredients and it is everything you love about the classic dessert except this version is vegan, gluten-free, much lower in sugar and a healthier take on banana pudding.
Banana pudding always reminds me of Magnolia Bakery. It is a hot commodity and I was first introduced to it years ago when I met Jordan. His family loves it and I was shocked I’d never try it before.
Usually when you think of banana pudding, you don’t assume it would be vegan or gluten free-friendly. But this version is 100% gluten-free and vegan and it is still SO good. It is a subtly sweet and cream dessert. Gluten-free vanilla wafers, freshly sliced bananas and a coconut yogurt mix that mimics pudding.
It is so crazy how delicious this pudding is yet it is made with such simple ingredients. This dairy-free version is made without a vanilla pudding mix, isn’t as loaded with sugar as the classic versions and I top it off with some coconut whipped cream before serving.
I love that this dish takes just 5 minutes of effort to make. I put this together when my littlest was napping to bring to my book club. Just mix all of the “pudding” ingredients together then layer with banana and some of the wafers.
You will love this recipe because it’s creamy, just the right amount of sweet and it is an easy no-bake dessert. You can also customize it to your liking or using what you have. I did a vanilla coconut yogurt but you could use really any non-dairy yogurt you’d like such as an oat-based or almond-based yogurt as well.
I hope you love this as much as we do – I can’t wait to hear what you think!
What ingredients you need to make this vegan banana pudding:
- Coconut yogurt – vanilla or plan and you can use another yogurt if you prefer)
- Cane sugar or coconut sugar
- Vanilla extract
- Gluten-free vanilla wafers – these are the best ever wafers!!!! Gluten-free or not, I’m obsessed
- Bananas – fresh bananas, sliced! I like to use ones that are not ripe enough for banana bread but not too green! Something with some “freckles”
- Coconut whipped cream – for topping I love to use this. You can use regular whipped cream if you want
How to make this healthier gluten-free banana pudding:
- In a large mixing bowl, add the yogurt, sugar and vanilla extract and mix well
- Add in 1 of the sliced bananas then mix with either spatula or you can use a hand mixer so it’s fluffier
- Using a large baking dish or serving bowl of your choice, layer 1/4 the pudding mixture on bottom, followed by layer of the wafers, banana and repeat until ingredients are used up (I did 3 layers total but it will vary based off the size of serving bowl)
- Add to fridge to chill for at least 2 hours or until ready to eat
- Serve with whipped cream on top and more wafers and bananas if desired
FAQs and tips on making heathy banana pudding:
- Do I have to let this pudding chill? I like to for about 2 hours if I have time. But you can also serve right away if you don’t have time!
- Can I prep this in advance? Yes! But the banana may brown a bit. I recommend serving within 2 hours of adding toppings but if you are making in advance, just add the top layer of bananas before serving.
- Do I have to use non-dairy yogurt? To make this vegan, yes. But if you’re not dairy-free/vegan, nope! Use a vanilla yogurt of your choosing.
- Can I add other toppings? Totally! Some shredded coconut, chocolate shavings or even some caramel is all amazing in this.
