Oh my gosh !!! Where do I begin?!? This is the ultimate dessert to make. A deep dish chocolate chip cookie with caramel sauce in the center. It is wild how delicious this is. And it is incredibly easy to make with just a few minutes of effort.

I love every part of this deep dish cookie. It has a crispy and golden edge to it and a soft gooey center. I love a good underbaked cookie that has a crispy edge and this deep dish hits the spot.

This is one of those desserts that you cannot get enough of. It’s like a giant chocolate chip cookie with melted caramel in the center. It’s tender, fluffy and one of those crowd pleaser desserts to serve.

I love how this is a dessert for holidays, birthdays, wine club or a random Tuesday night at home. You will obsess over this as much as I do, I know it. It reminds me of those deep-dish cookie skillets they serve in restaurants. Usually add some ice cream on top and you have a little cookie a la mode action.

What ingredients you need for this deep dish chocolate chip cookie with caramel:

  • Butter – I use unsalted butter for this. If you’re dairy-free you can use a vegan butter too
  • Coconut sugar – I haven’t tried another sugar here. It needs to be a grain-like consistency. Not liquid sugar like maple syrup or honey
  • Vanilla extract – so needed for flavor here! Not a cookie without vanilla extract
  • Maple syrup – you can omit if you want but I like adding a touch of this to the deep dish cookie for flavor
  • Eggs or flax eggs – either eggs or flax eggs can work for this recipe
  • Gluten-free flour – I haven’t tried another flour but you can use regular all purpose flour if you’re not gluten-free
  • Sea salt – I like using flakey sea salt for this the most
  • Chocolate chips – you can really use any chocolate you are craving. It can be milk chocolate, dark chocolate, semi-sweet or even white chocolate!
  • Caramel sauce – you can make your own like I did or use a store-bought caramel sauce. Either way works!

How to make this gluten-free deep dish cookie skillet:

  1. Preheat oven to 350 degrees F and line a 10-12 inch cast iron skillet with parchment paper and grease
  2. Soften butter in microwave for about 30 seconds
  3. Add butter to a large mixing bowl with coconut sugar and cream together until smooth
  4. Add in vanilla and maple syrup then mix together again until smooth
  5. Beat in the eggs then add in flour, salt and baking soda so the dough combines (it’ll be sticky and very doughy)
  6. Fold in chocolate chips then add 1/2 the batter to the skillet and pour caramel sauce on top then spread the other half of the dough across the caramel layer
  7. Bake in oven for about 20-25 minutes or until edges are golden
  8. Remove from oven and allow the skillet to cool (if you can wait!!)
  9. Sprinkle flakey some sea salt across if desired and enjoy!

  1. How do I store this deep dish cookie? In an airtight container for 5-7 days. Or you can freeze it for 2 months. This skillet cookie goes fast though in our house. We cannot stop eating it!
  2. My deep dish skillet cookie isn’t fully cooked, is that okay? Yes! You want this to be ooey gooey and slightly underbaked. Plus when you take it out of the oven, it will continue to cook in the cast iron skillet since it holds heat for awhile after baking in the oven.
  3. I’m not gluten-free, can I use regular flour? You can! Any all-purpose flour works well in this recipe. I haven’t tried an almond flour or alternative flour.
  4. If you’re craving other flavors, add in more mix-in’s! Marshmallows, peanut butter swirls, crushed walnuts, anything you’d like.
