This banana bread!!! Basically jumping up and down in my chair typing this blog post for you guys.
We are combining brownies with banana bread basically and I am here for IT because this recipe has been on repeat in our home. Between J and I eating it for breakfast and snacking on it all day, it goes fast. Luckily it is pretty easy to make and you can whip this up in no time.
This Blackout Banana Bread Skillet is paleo, vegan and tastes like a banana bread brownie.
I know what you’re thinking.. “Rachel do you need yet another banana bread recipe?” And the answer is yes, yes I do. Because this bread is unlike the others. It is chocolatey and just the right texture and consistency. It is one of those recipes that you can enjoy for breakfast, snack or dessert. Especially with a dollop of ice cream or yogurt on top. I was loving this with some coconut yogurt and a drizzle of peanut butter!
Let’s run through what key ingredients we need bake this healthy chocolatey banana bread..
- Bananas – the more ripe the better! It’ll be extra sweet then
- Flax egg – I use Garden of Life Ground Flax to make my flax eggs. Combine 1 tablespoon ground flax + 3 tablespoons water per egg
- Coconut oil – I melted Garden of Life Organic Extra Virgin Coconut Oil
- Coconut sugar
- Almond flour – I haven’t tested another flour but if you want to use a grain-based one sub oat flour (just use a little less)
- Cacao powder
- Chocolate chips – I used these, code RACHL for free shipping

Ingredients
- 2 large ripe bananas
- 2 flax eggs (2 tablespoon Garden of Life ground flax + 5 water)
- 1 teaspoon vanilla extract
- 1/2 cup coconut oil, melted and cooled (I used Garden of Life)
- 3/4 cup coconut sugar*
- 2 cups almond flour*
- 1/2 cup cacao powder
- 1 teaspoon baking powder
- 1/2 cup dark chocolate (code RACHL for free shipping)
Instructions
- Preheat oven to 350 degrees and grease a 10-12 inch skillet with oil
- In a large bowl, whisk together bananas, eggs, vanilla extract, coconut oil and coconut sugar
- Mix in the almond flour, cacao powder and baking powder until smooth
- Fold in dark chocolate chips then add batter to skillet and bake in oven for 30-35 minutes (or until toothpick comes out clean)
- Dig in and enjoy!

*I haven’t tested other flours or other sugars here
**Store leftovers in fridge for 5 days or freezer for longer

Wow, this was fudgy and delicious and the prep time was super fast. With the banana slices on top, definitely would serve this as a showstopper next time I’m hosting brunch.

This is SO GOOD!! I baked it in a glass pan and had to basically double the cooking time, but once it was finally baked it was amazing. I also used less oil (about 1/3 of a cup instead of a 1/2) and it still turned out super moist and delish. Highly recommend to cure a chocolate craving!!
