After sharing that insanely delicious easiest healthy mac & cheese a few months ago, I have been dabbling with another version with some extra veggies in it for us.
This Healthy Broccoli Mac & Cheese is absolutely insane. It is one of those comfort foods you will crave over and over again and it really easy and simple to make. With a recipe like this around, you won’t be looking to boxed mac & cheese anymore. Just store the key ingredients needed to whip this up, and you’ll have dinner ready in 15 minutes.

I always switch things up with my gluten-free pastas that I use. Sometimes it is a veggie or bean-based pasta. other times it is a rice based one. I like to diversify the noodles as much as possible to make sure Ez also gets a variety of foods in his diet. I do also used sprouted noodles with gluten it too. Really anything works!
Now let’s run through what ingredients are needed to make this healthy cheesy pasta..
- Gluten-free pasta – any noodle, any kind, just use your favorite one! I used these
- Cooked broccoli – you can also use peas or anything veggie if you have a preference. I love using broccoli the most to sneak this veggie in, but do what works for you
- Organic shredded cheddar cheese – use a dairy-free one if you need!
- Nutritional yeast – adds that extra cheesy flavor too
- Non-dairy milk – any kind you want! Plain/unsweetened preferred so it isn’t adding sweetness. It is meant for creaminess.

Yield: Serves 3
Ingredients
- 8 ounces uncooked gluten-free pasta (any variety works)
- 2 cups cooked organic broccoli, chopped (I buy frozen usually so it is easy to cook quickly)
- 1/3 cup organic shredded cheese
- 1/3 cup non-dairy milk
- 2 tablespoons nutritional yeast
- Sea salt, pepper and garlic to taste
Instructions
- Cook pasta according to instructions
- As pasta cooks, mix together the cheese, milk, nutritional yeast and spices and warm over medium heat in a small pot. Continue to stir until the cheese mixture is melted
- Strain pasta then add back to pot and mix in the cheese sauce and fold in the broccoli
- Enjoy while warm!

How do you get the cheese to melt in the milk? I find if i don’t have a roux cheese just separates and doesn’t melt into the milk, but yours did! What’s the trick? And will it work for any cheese? I tend to use either cheddar or a mix of cheddar and mozarella and/or edam

it melts when you warm it in the sauce pan. i haven’t ever had an issue of cheese not melting when you warm it over the stove with the milk. i usually use cheddar.
