Call me crazy but 9 out of 10 times, Ezra and I eat the same thing. I don’t really have “kid food” around or anything we call “Ezra food”. I knew as soon as I started feeding Ez, I wanted all things about food to be inclusive.

Of course the quantities differ between us both, but the foods on our plate are the same. For example, of I am eating one of my ginger scallion turkey burger with sweet potato fries for dinner, Ez is having the same thing deconstructed. I don’t hand in the bun with turkey burger (although I think he would love that ha!). But I give him the turkey burger sans bun, fries and some avocado (all cut up). Who knows if this will be the best approach long term, but it makes it so easy for me that we eat the same thing.

Whenever Ez isn’t a huge fan of a food group, I offer it a handful of times (on different occasions) but I don’t force him to eat anything he really doesn’t like. Especially when it comes to pasta or grilled chicken – two things I personally am not obsessed with.

What ingredients I used to make this breakfast snack board:

You can use whatever you have on hand, but this has been our favorite combo over here.

  • Evergreen toaster waffles – these are so good! My whole family loves them and they are made with all simple ingredients like whole wheat flour, eggs, sweetened with honey and they come in 4 different flavors: zucchini carrot, peanut butter + banana, mix berry + almond and chocolate chip + matcha. They are a staple in our freezer. They only take a couple minutes to toast up and you are good to go. Plus I love that the zucchini carrot sneaks in some extra veggies too. The founder, Emily, is also coming on my podcast soon and I cannot wait for you guys to hear more about her story!
  • Fresh fruit – anything works! I used berries and cantaloupe!
  • Fresh peach jam – SO GOOD you guys. I share the recipe below, but it is a must-try this summer.
  • Coconut yogurt – or any yogurt you have. But I love adding in this healthy fat to the mix and it tastes so good smeared on the waffles with jam.

How to make the healthy homemade peach jam:

Full recipe is below and the instructions are super simple! Plus it is lower in sugar compared to most jams.

  1. Mix everything together in a medium non-reactive pot.
  2. Bring to a light boil over medium-high heat and let it boil, uncovered, for 30-50 minutes or until thick enough for your liking. Stir occasionally and pay close attention after 30 minutes. The longer it cooks, the more often you need to stir. The amount of time will depend on how juicy your peaches are.
  3. When you think your jam is thick enough, continue boiling and put some of the jam on a clean spoon and then put the spoon on a plate in the freezer. Let it sit for five minutes and then take it out. If the jam falls easily off the spoon when you turn it to the side, it’s not ready and you should continue cooking for another 5 minutes and try the test again.
  4. Let cool and then pour the jam into jars and store in the fridge and for up 1 week. Freeze any leftovers after that.

Breakfast Snack Board with Peach Jam

Ingredients

  • About 8 peaches, peeled and sliced into small pieces
  • 2 tablespoons lemon juice
  • 2 tablespoons maple syrup
  • 1/4 teaspoon cinnamon

Instructions

  1. In a large pot, mix everything together
  2. Bring to a light boil over medium-high heat and let it boil, uncovered, for 30-50 minutes or until until thick. Stir occasionally every few minutes while it cooks
  3. Remove from heat when it is thick to your liking
  4. Let cool and then pour the jam into jars and enjoy! I served with these toaster waffles – love!
  5. I served mine with Evergreen waffles, fresh fruit + coconut yogurt!

Notes

*Store leftovers in fridge for 5 days or freezer for 2 months
