Raise your hand if you always had Peelz packed in your lunch box as a kid!! (I am raising both of my hands right now).
My mama always kept Peelz Mandarin Oranges in the house for snacking whenever they were in season. They are forever one of our family’s favorite fruits and fridge staples. And now I am doing the same thing for my fam and especially for Ez. He is absolutely fruit obsessed and Peelz are his new go-to every afternoon. He points to them and goes “din din” and rubs his belly – it is the cutest thing ever.
Today we are using some of our Peelz to make these insanely delicious Mandarin Orange Chocolate Chip Muffins. And they just so happen to be gluten-free, paleo, dairy-free and have no refined sugars. You only need a few ingredients to make them and they will be done in just 20 minutes.
I highlyyyy recommend stocking up on Peelz at your local store whiel you can (here is a link on where to find them!). They are hands down the easiest to peel (haha see what I did there?!). And they are seedless, juicy, sweet and they make for the best chocolate chip muffins too now.

What ingredients you need to bake paleo + gluten-free mandarin orange chocolate muffins:
- Eggs – I haven’t tested flax egg, but it should work well
- Liquid coconut oil
- Maple syrup – or you can use honey as well
- Mandarin juice – or orange juice works too!
- Non-dairy milk
- Peelz Mandarins
- Almond flour
- Coconut flour
- Dark chocolate chips
How to bake these healthy mandarin chocolate chip muffins:
- Preheat oven to 350 degrees and line a muffin tray with liners or grease well
- In a large bowl, whisk together the eggs, oil, maple syrup, juice, and milk
- Add in the zest, almond flour, coconut flour, baking powder and mix again so batter is smooth and there are no clumps of flour
- Fold in dark chocolate chips then fill tray to make about 9 muffins
- Bake in oven for 18-20 minutes (I stick toothpick in to see if they are ready)
- Allow muffins to cool then enjoy!
