Hellllloooooo to your new go-to lunch and what is officially the easiest meal known to man kind. This vegan CHICKPEA SALAD SANDWICH! Think of it like a tuna or egg salad but vegan and not boring. And in my opinion tastes pretty darn good especially on some toasted sourdough bread and with a little crunch in the salad from the pepper.
I love making this earlier in the week so I can nosh on it for a couple days. It stays well if you want to pack it for school, work, anything!

What ingredients you need to make a vegan chickpea salad sandwich:
- Can chickpeas, rinsed and washed
- Vegan mayo of choice
- Dijon mustard
- Bell pepper
- Garlic powder, onion powder
- Sea salt and black pepper to taste
- Cilantro, chopped and stems removed
- Sandwich add-in ideas: bread of choice (I usually use sourdough), dijon mustard, avocado, pickled onions, lettuce, tomato, anything!

Ingredients
Chickpea salad:
- 15-ounce can chickpeas, rinsed and washed
- 1 tablespoon vegan mayo of choice
- 1 tablespoon dijon mustard
- 1/4 teaspoon garlic powder, onion powder
- Sea salt and black pepper to taste
- 1 tablespoon cilantro, chopped and stems removed
- 2 tablespoons bell pepper, chopped
Sandwich add-in ideas:
- Bread of choice (I usually use sourdough)
- Dijon Mustard
- Avocado
- Pickled onions
- Lettuce
- Tomato
Instructions
- Add the chickpea ingredients to food processor and pulse very briefly to combine everything. I like to keep mine a little chunky!
- Toast bread if needed and add the chickpea salad and desired toppings on top and enjoy!
