Say a big warm hello and welcome to your new go-to salad guys. The Salmon Cobb Salad is HERE! And she is a damn beaut.

This salad combo randomly came to me one night when I was nursing Brody. The next day I immediately went to the store and bought all the ingredients to whip it up and holy beep – I am so glad I did.

A Salmon Cobb Salad is the best twist on a classic. Filled with tons of healthy fats like salmon, avocado and hardboiled eggs. Plus you can use any greens you want and dressing you are craving. Jord and I have been loving this for an easy lunch and pairing it with some pita chips on the side. You know I always need a little crunch with my salad 😉

What ingredients you need to make salmon cobb salad:

  • Cooked salmon (I look for Wild King Salmon – my favorite)
  • Hard boiled eggs, cut into small pieces
  • Cooked bacon, cut into small pieces
  • Cucumber, chopped
  • Blue cheese crumbles
  • Avocado, cut into cubes
  • Greens of choice (I usually use butter lettuce or romaine)
  • Your favorite dressing (I love using dijon, ranch or my caesar one)

How to whip up this easy salad:

  1. Toss together the eggs, bacon, cucumber, blue cheese, avocado and greens in a large bowl until mixed
  2. Distribute to two bowls and top with salmon and dressing and enjoy! (I recommend adding the salmon last and while warm if you can so the natural oils go into the salad!)

  • 2 5-6 ounce pieces cooked salmon (I look for Wild King Salmon – my favorite)
  • 4 hard boiled eggs, cut into small pieces

  • 1 small cucumber, chopped
  • 1/3 cup blue cheese crumbles
  • 1/2 avocado, cut into cubes
  • 5 cups greens of choice (I usually use butter lettuce or romaine)
  • Your favorite dressing (I love using dijon, ranch or my caesar one)

Instructions

  1. Toss together the eggs, bacon, cucumber, blue cheese, avocado and greens in a large bowl until mixed

Notes

*Store leftovers in fridge for a couple days, but usually this is best day of!
